It has the meat, peppers, tomatoes, Italian seasoning, and cauliflower rice. In fact, you could call it unstuffed pepper soup!
The peppers are chopped instead of in large pieces or whole. Which makes this a great soup to give your family or kids that usually don’t like big bites of peppers.
Other than browning the ground beef first, this is a simple recipe that only involves putting everything in the slow cooker and letting it cook all day!
Keto Slow Cooker Soup
There are days when the slow cooker really saves the day! When you don’t really have time to make a layered lasagna or bake lasagna stuffed peppers, this recipe gives you all of the flavors you love without a ton of work.
If your slow cooker runs hot, I suggest using a slow cooker liner. It will make it so much easier to clean up at the end.
If you aren’t going to use a liner, spray the slow cooker with non-stick spray – especially if you aren’t going to be around to stir it throughout the day to prevent the soup from sticking to the bottom and sides.

This is a very mild-flavored soup. If you want to amp up the flavors and add some heat, I suggest sprinkling some red pepper flakes into the broth.
You can also make it with a few diced jalapeno peppers, too! I used cauliflower rice to bulk up the soup, but you can use any type of riced veggies that you want.
It will taste just as delicious with some broccoli rice.

Best Meat For Stuffed Peppers
I used ground beef, but I suggest using as lean of a beef as you can. That way the soup won’t be greasy. You can also make it with half ground beef and half ground sausage to give it a bit of a kick.
If you want to use ground chicken or ground turkey, I suggest adding a bit more garlic and seasonings. The leaner meats don’t have as much flavor so the herbs will help the soup taste better.

- Bell Peppers
- Onion
- Minced Garlic
- Beef Broth
- Worcestershire Sauce
- Roma Tomatoes
- Canned Diced Tomatoes
- Tomato Paste
- Italian Seasoning
- Cauliflower Rice
- Salt and Pepper
Directions
Brown the ground beef in a skillet over medium high until completely cooked through. Drain the excess grease.
Add the peppers, onions, garlic, worcestershire sauce, roma tomatoes, diced tomatoes, Italian seasoning and salt and pepper to taste to the slow cooker.
In a bowl, whisk together the broth and tomato paste. Stir the cooked beef into the slow cooker.
Pour the broth mixture over the ingredients. Stir to combine.
Cover and cook on high for 4 hours. Remove the lid, stir in the cauliflower rice, and cook for another 30 minutes before
serving.
