This all depends on how you make it and which vegetables you use. Most homemade vegetable soups use root vegetables – like potatoes – and add corn to it.

Corn and potatoes are a no-go on the keto diet. My soup has 5 grams net carbs in each serving.
It’s made with turnips instead of potatoes. There are some ways that you can cut back on the carbs even more.
Use less carrots and only half of a turnip. But this soup is so hearty and filling that you’ll be shocked there are only 5 grams carbs in it.

- Beef Broth – Vegetable broth is the perfect substitute.
- Dried Herbs – Use the fresh herbs for more aroma and flavor

- Spice – Add some jalapeno or poblano peppers to give it a bit of a kick
Best Keto-Friendly Vegetables
The best vegetables for a keto diet are high in fiber and low in sugar. These are the veggies you want to eat the most of on keto, and you can use them in your soup.

- Cauliflower
- Green Beans
- Celery
Carrots and turnips are a bit higher in carbs, so eat them in moderation.
What To Eat With Sausage and Veggie Soup
Since this sausage and veggie soup is packed with so many different vegetables, it’s really filling! So I like to serve it with some lighter sides, like a salad or sandwich.

My favorite salads are a keto Southwest salad and a keto chicken crust pizza topped with Caesar salad slaw. Both will complement the sausage and veggie soup.
For sandwiches, I prefer a keto pull-apart sandwich or keto club sandwich roll-ups. They are fantastic choices and taste amazing with sausage and veggie soup.
How To Store Vegetable Soup
Store your leftover keto vegetable soup in an airtight and spill-proof container in the refrigerator for up to three days. Then, reheat it in the microwave or on the stove.

You can freeze the soup, too. Place the soup in an airtight freezer bag and seal it.
Then, lay it flat on a baking sheet and put it in the freezer. Once it is frozen solid, keep it in the freezer for up to six months.
To thaw it, place it in the refrigerator overnight and then reheat it on the stove.

Ingredients
- Italian Sausage
- Butter
- Onion
- Red Bell Pepper
- Celery
- Matchstick Carrots
- Turnip
- Beef Broth
- Minced Garlic
- Dried Basil
- Dried Rosemary
- Dried Oregano
Directions

Add the sausage to a skillet over medium high heat, and saute until completely browned and cooked through. Drain the excess grease.

In a pot, melt the butter over medium heat.
Stir in the onions, pepper, celery, and turnips. Saute until the vegetables are beginning to soften.

Mix in the garlic, basil, rosemary, oregano, carrots and salt and pepper to taste. Saute for 1 minute.

Place the sausage in the pot, and pour in the beef broth.
Cover and simmer for 15-20 minutes until the turnips have softened.

Season with more salt and pepper to taste before serving if desired.
