This is a dessert you make quickly but eat slowly. Low-carb cookies and cream fluff is light and airy, with sugar-free sandwich cookies mixed in (and added on top!).
What Is Fluff Dessert
If this is your first time making fluff, you’re in for a serious treat! A fluff dessert is a whipped no-bake recipe made with cream cheese and heavy whipping cream.
That’s the most basic version, but you can add all sorts of ingredients to make your favorite flavors.
I’ve made other fluff recipes before, and all of them are low-carb. I started out with Low-Carb strawberry Jell-O fluff, but then I realized I can make it without the gelatin.
So then I made a keto cherry cheesecake fluff and low-carb strawberry cheesecake fluff. Then I rounded out all the fruity flavors by also making a low-carb blueberry fluff.
This time, I’m branching out of the fruity ideas and making a cookie-themed fluff dessert. I love it – and you will too!
Cookies and Cream Fluff
I love Cookies and Cream desserts! Whether it’s cookies and cream ice cream or a pie or something else, I just adore that combination of crumbly chocolate cookies and sweet vanilla cream.
I found a way to recreate the iconic flavor combination into a no-bake dessert. It’s ready in about 10 or 15 minutes, and only uses five easy ingredients.
To make the fluffy goodness, I suggest using both a food processor and an electric mixer. The food processor easily chops the cookies into tiny crumbs.
The electric mixer will whip up the cream cheese and heavy whipping cream. You could mix everything by hand, but it will take a lot more work.
Low-Carb Cookies and Cream Fluff
You might think that cream cheese, vanilla, heavy whipping cream, and confectioner’s sugar substitute sounds like the ingredients for frosting. And you’d be correct!
That’s why I suggest only eating one small serving at a time. This entire recipe makes four servings and there are 6 grams net carbs in each serving.
A bowl of cookies and cream fluff is really rich. You can adjust how sweet it is by using less confectioner’s sugar substitute.
You can also control how thick it is, too. If you want it to be thicker (almost a cheesecake consistency), then use less heavy whipping cream and more cream cheese. It’s that easy!
Keto Chocolate Sandwich Cookies
The secret to cookies and cream fluff is the chocolate and cream sandwich cookies. I found some cookies that look and taste just like Oreos – but they are low in carbs and high in fiber.
That means they’re good to eat on the keto diet. For this dessert, I used Choc Zero Dunkies Chocolate and Cream cookies.
If you found a different kind from another brand, go ahead and use them! Just make sure to recalculate how many carbs are in each serving. I calculated the carbs based on the Choc Zero cookies.
How Long Does Cream Cheese Fluff Last
If you have leftover no-bake fluff, then store it in an airtight food storage container and keep it in the refrigerator. It will stay fresh for about two or three days.
When you’re ready to eat it again, you might have to give it a good stir, but it should taste just as good even a few days later.
I don’t recommend freezing it. It’s so easy to whip up that freezing and then thawing it will actually take longer than just making a fresh batch!
Plus, when you thaw it, the fluff will have a different texture.
