If you love pumpkin pie, churros, and pecan desserts, then this is all of that roll-up into one amazing dessert. The crispy tortillas are dusted with a cinnamon sugar (substitute) coating.
Then, inside, they’re filled with a rich and creamy combination of pumpkin puree, cream cheese, and chopped pecans! With only 2 grams net carbs per roll-up, it’s the perfect thing to eat when you’re craving pumpkin pie.
Plus, the cream cheese and pecans give these roll-ups both a boost of protein and healthy fats. If you’re feeling hungry after a meal, one or two of these will keep you full until breakfast tomorrow.
Pumpkin Pecan Roll Ups
I love making roll-ups out of zero carb street taco-sized tortillas. Keto tortillas have to be one of the best food inventions I have found!
I love them and you will too after you eat these delicious roll-ups. The secret to making them as crispy as a churro is to heat olive oil in a skillet and then sear the roll-ups, seam side down.
Keep sauteeing them until they are crispy, all the way around. Alternatively, you could air fry them too!
To air fry the roll-ups, place them in the air fryer basket. Then, fry them at 400F for about 5 minutes, flip them over, and fry for another 4-5 minutes.
Pumpkin Cream Cheese Dessert
The combination of pumpkin and cream cheese reminds me of pumpkin pie! They really go so well together.
They are a natural duo, like peanut butter and jelly or cinnamon and sugar. I’ve used this combination before to make keto pumpkin cream cheese swirl muffins.

How To Store Roll-Ups
These pumpkin roll-ups taste best when they are fresh off the stove, but you can enjoy them up to a few days later. Store leftover roll-ups in an airtight container and store them in the refrigerator for up to three days.
Can you freeze them? Yes, you can! Wrap each chilled and baked roll-up in plastic wrap or foil. Then place them in a freezer-safe food storage bag. They will stay fresh in the freezer for up to six months.

Directions
1. Blend together the cream cheese, pumpkin puree, pumpkin pie spice, Swerve and

2. Place a line of the filling down the center of each tortilla, and roll closed.
3. Heat the olive oil in a skillet over medium heat, and place the tortillas seam side down into the heated oil.
4. Saute the tortillas on each side until browned and crispy.
5. Brush the butter on the outside of the tortillas.
