These roll-ups taste like a mix between a churro and blueberry cheesecake. There are just 3 grams net carbs in each roll-up. So feel free to indulge in more than one.

These tasty roll-ups are made with both cream cheese and plain greek yogurt, so they are packed with healthy fats and protein, too!

These roll-ups are crispy, dusted with sugar-free powdered sugar, and filled with a thick blueberry filling. They almost taste like a combination of a funnel cake and a cheesecake. But they are so low in carbs that you’ll feel like you’re cheating.

I suggest using fresh blueberries in this recipe. They have the best flavor! 

If you want to use frozen blueberries, let them thaw first and then use a paper towel to remove as much moisture as you can.

Ingredients 

Ingredients Needed to make Crispy Keto Blueberry Cream Cheese Roll-Ups

  • Zero carb small keto tortillas
  • Fresh blueberries
  • Cream cheese
  • Plain Greek yogurt
  • Vanilla extract
  • Butter melted
  • Swerve confectioners sugar substitute + additional for dusting

Directions

Cream Cheese

Preheat the air fryer to 375 degrees. Add the cream cheese, yogurt, vanilla and Swerve to a mixing bowl, and blend until smooth and creamy.

Spread a layer of the cream cheese mixture down the center of each tortilla.

Top the cream cheese layer with fresh blueberries.

Roll the tortillas closed around the filling, and place seam side down into a well greased pan or rack. Brush the top of the tortillas with the melted butter.

Cook for 8-10 minutes, or until browned and crispy on the outside. Dust with more Swerve before serving.

  • 1/3 cup Fresh Blueberries
  • 6 ounces Cream Cheese
  • 2 tbsp Plain Greek Yogurt
  • 1 tsp Vanilla Extract
  • 2 tbsp Butter melted
  • 3 tbsp Swerve Confectioner's Sugar Substitute plus additional for dusting
