What is the ultimate sandwich? The Grinder!
It’s basically a combination of the best smoked Italian meats and cheeses with some red onions and tomatoes. After I recreated the iconic sandwich in my first keto grinder salad, I knew I could take it one step further.
So, I all those deli meats and cheeses, added some shredded chicken, and then topped it all with my creamy vinaigrette. Every single bite is a mouthful of flavor.
From the tangy Greek yogurt to the bold banana peppers – you’re going to love this chicken salad.
Low-Carb Grinder Salad
I don’t know why it’s called a Grinder. Some say the sandwich was named after the dock workers that ate it.
Others think the Italian bread that was used was really stale. No matter what, I can honestly say this sandwich started in New England and I’m so glad I discovered it!
It tastes even better as a chicken salad, too and you’ll love how low in carbs it is, too! There are only 2 grams of net carbs in each serving!
This entire recipe makes six servings. So, there will be plenty left over for your weekly meal prep.
Italian Chicken Salad
You have a lot of options when it comes to the chicken. You can make your chicken fresh, which will taste the best or, use some leftover baked chicken that you have in the fridge.
Save some time and use rotisserie chicken! Or drain and rinse some canned chicken and use that in your salad.
Use freshly grated parmesan cheese – it has a bigger and bolder flavor! You’ll love it.
High-Protein Chicken Salad
This is a fun and delicious way to eat more protein. I used shredded chicken, pepperoni, salami, provolone cheese, and Greek yogurt.
All together, it’s enough protein to keep you feeling full until your next meal!
If you wanted to add more fiber, then you could dice some cucumbers and add some shredded lettuce to the salad, too. For more protein, mix in some bacon.
If you want it to be spicier, mix in some sliced jalapeno peppers. Yum!
What To Eat With Chicken Salad
This is the perfect lunch. Since it makes so much, store your leftovers in an airtight container and keep it in the fridge for up to three days.
When you’re ready to eat it, I suggest serving it with some simple sides.

Ingredients:
- Shredded chicken
- Chopped deli pepperoni
- Chopped deli salami
- Slices provolone cheese chopped
- Banana peppers chopped

- Roma tomatoes chopped
For the dressing:
- Mayonnaise
- Plain Greek yogurt
- Red wine vinegar
- Minced garlic
- Italian seasoning
- Grated parmesan cheese
Instructions:
Toss together the chicken, salami, pepperoni, provolone, tomatoes, banana peppers and red onion in a mixing bowl until well combined.
Whisk together the dressing ingredients in a separate bowl, and pour over the salad ingredients. Toss to coat well.
Serve immediately, or chill before serving if desired.

- 1/4 pound Chopped Deli Pepperoni
- 1/4 pound Chopped Deli Salami
- 4 slices Provolone Cheese Chopped
- 1/3 cup Banana Peppers chopped
- 1/4 cup Chopped Red Onion
- 1 1/2 Roma Tomatoes chopped
Dressing
- 1/4 cup Mayonnaise
- 2 tbsp Plain Greek Yogurt
- 1 1/2 tbsp Red Wine Vinegar
- 1 tsp Minced Garlic
- 1/2 tsp Italian Seasoning
- 2 tbsp Grated Parmesan Cheese
Instructions
