The most common berries that ripen in the summer are blueberries, strawberries, raspberries, and blackberries. And the best news is that all of these berries are low-carb and keto-friendly.
I only used two types of berries in this summer berry chicken salad – blueberries and strawberries. They might be low in carbs, but fruit still has carbs.
If you want to add some raspberries or blackberries, add those carbs to the total carbs in the salad. Since blackberries have the lowest amount of net carbs, if you want to change the recipe, use blackberries instead of blueberries.

The juicy berries and tender chicken are complemented by the crunchy walnuts and crispy celery. This is definitely a salad that you make when you’re tired of boring soft chicken salads.
The dressing is really simple. The dressing is just mayo and Dijon mustard. Since mustard is (usually) a carb-free condiment, it’s a fun ingredient to experiment with.
Instead of dijon mustard, make this with other types of mustard. Try it with spicy brown mustard, yellow mustard, or whole grain mustard.

There are 4 grams net carbs in each serving of this salad, and this recipe makes 4 servings. If you’re wondering, “does chicken salad have high carbs?” The answer is no, it doesn’t.
Most recipes have about 6-8 grams net carbs in each serving, so this is a really low-carb recipe. I tried to keep it as simple as possible.
That’s why I used canned chicken. Yes, canned chicken is higher in sodium, which is bad for people with high cholesterol.
If you need a low-sodium option, I suggest boiling and shredding some chicken breasts or cutting up some rotisserie chicken.
How To Eat Chicken Salad
Since this chicken salad recipe has celery, nuts, and berries in it, you’ll need to eat it with a fork. Some types of chicken salad are easier to eat with bread as a sandwich.
But this one has so much texture that it’s better to just eat it with a fork. You can try to eat it with some cloud bread, but I think it will be messy and difficult.
Even though it’s called a salad, since it’s made with chicken, I suggest treating it like the main course and serving it with your favorite low-carb sides.
It will taste delicious with keto Caesar salad slaw chicken crust pizza. Or change up the flavors and eat it with a bowl of a keto chopped BLT steak salad.
How To Store Chicken Salad
Since this chicken salad is made with fresh berries, you need to eat it as soon as possible. Most types of chicken salad are made with basically chicken and dressing, so they last about a week in the refrigerator.

How do you know when chicken salad is bad? If the berries are too squishy and shriveled, the dressing is separating, or it smells sour, then throw it away.
Since this salad involves just mixing everything together, I suggest making as much as you can eat in one sitting instead of trying to store leftovers.
