What do you get when you take all of your favorite ingredients from your favorite sub sandwich and turn it into a salad? You get the incredibly popular grinder salad!
So, where did the name grinder come from? Not the app! It’s actually a nickname that someone gave to the Italian-American sandwich that was usually served on crusted bread because it was so hard to chew.
People felt like they were grinding down to eat it.

A keto grinder salad is basically all the best things about a grinder sandwich, but served on top of shredded lettuce and topped with an incredible champagne salad dressing.
If you’re going to make this for your meal prep, I suggest storing the salad separately from the salad dressing. This way, your salad won’t get all soggy.
Keto Grinder Salad
In order to keep it true to the original grinder salad, you’ll want to use deli salami, ham, and pepperoncini peppers. Red onions are really good on this salad too – but don’t use too many or else they will overpower the rest of the ingredients.
If you want to mix things up, add some pepperoni slices and chopped prosciutto.
The cherry tomatoes are a classic part of a grinder salad, but you can leave them out if you’re trying to cut back on your carbs a bit.
What To Eat With Salad
This is a very filling salad, so you don’t have to eat much with it! I’m all about eating a soup and salad for lunch, so I like eating this meaty salad with either keto turmeric zucchini soup, low-carb dill pickle soup with bacon, or keto french onion soup.
Are you more of a salad and sandwich person? If so, make some tasty roll-ups with your grinder salad. My favorites are keto club sandwich roll ups, keto philly cheesesteak roll ups, and keto sausage and spinach roll-ups.
Champagne Salad Dressing
One of the best things about this keto grinder salad is the dressing! It’s made with a base of mayo and sweetened with a bit of champagne (and other herbs and spices, like garlic and parsley).
Before you start questioning or Googling, “is champagne keto,” let me answer that for you. Yes, champagne is a low-carb alcoholic drink.
There are just 3-4 grams of carbs in 5 ounces (and I only used 2 teaspoons in the entire dressing). Even so, you can choose to use white wine vinegar instead of champagne; it will still taste just as delicious.
Keto Grinder Salad Recipe

Ingredients:
Shredded lettuce
Sliced pepperoncini peppers
Red onion
Deli salami
Deli ham
Shredded mozzarella cheese
Cherry tomatoes
For the dressing:
Mayonnaise
Minced garlic
Olive oil
Champagne or white wine vinegar
Italian seasoning
Grated parmesan cheese
Salt and pepper
Instructions:
Place the shredded lettuce into a large serving bowl.
Top the lettuce with rows of the red onion, salami, ham, peppers, tomatoes and mozzarella cheese.
Add all of the dressing ingredients to a jar with a lid, and shake to combine well.
Serve the salad tossed with the dressing, or serve the dressing on the side if desired.

Champagne Dressing
- 1/4 cup Mayonnaise
- 2 tsp Minced Garlic
- 1/4 cup Olive Oil
- 2 tsp Champagne or White Wine Vinegar
- 1 tsp Italian Seasoning
- 3 tbsp Grated Parmesan Cheese
Instructions
