Maybe you’ve had salad with fresh cucumbers. And you’ve probably enjoyed a creamy chicken salad.
But have you ever tried to put them together? It tastes better than you can even imagine! In this simple recipe, I combined my two favorite types of salad.
I added crispy fresh veggies to my zesty chicken salad. The result is a salad that’s filling, hearty, packed with protein, and filled with fiber-rich veggies.
I can’t exactly decide whether I like the veggies and chicken or the creamy dressing better. The dressing is amazing!
I used fresh dill, both sour cream and mayonnaise, and a combination of apple cider vinegar and dijon mustard.
In fact, save this recipe so you can remember how to make the dressing again. It tastes amazing as a veggie dip, sandwich spread, or on top of your favorite lettuce and veggies.
Sliced Cucumber Chicken Salad
In order for the salad to be easy to eat, I suggest using a small and thin cucumber. If you want to use a fat garden cucumber, then chop it into tiny pieces so it mixes in better with the chicken and veggies.
In fact, make sure that the belle pepper and bacon are both cut up into small pieces too. I like to use a mandolin slicer for my cucumbers.
It will make them super thin. Just be careful and use the proper tools. The best type of cucumbers to use sin this salad are either English cucumbers or baby ones.
Keto Cucumber Chicken Salad
In the recipe, I called for three cups of shredded cooked chicken. You can use any type of cooked chicken that you have on hand.
My mayo roasted chicken and green goddess chicken will both taste amazing in the salad. Or save yourself a lot of time and just grab a rotisserie chicken from the grocery store.
Do you have a lot of leftover roasted turkey to use? Then use that instead of chicken! Yup, turkey and cucumber will taste amazing together with the dill vinaigrette.
What To Eat With Chicken Salad
There are only 2 grams net carbs in each serving of this delicious cucumber chicken salad. That means you can eat pretty much any keto-friendly food or recipe with it!
I love food with a lot of spice, so I suggest eating a few Keto Jalapeno Deviled Eggs with the salad. It’s the perfect lunch.
If you’re really hungry, then add a serving of Low Carb Green Bean Stuffing Casserole with it.

How To Store Chicken Salad
I suggest eating this salad as soon as possible. That way, the dressing won’t soften the cucumbers and veggies.
Store it in an airtight food storage container and keep it in the refrigerator.
How do you know when chicken salad is bad? If the veggies are too soft, the dressing is separating, or it smells sour, then throw it away.
Since this salad involves just mixing everything together, I suggest making as much as you can eat in one sitting instead of trying to store leftovers.
