Make this low-carb vegetable beef soup when you need something hot and hearty! It’s perfect for meal prep or as a freezer meal too.

You know those days when it is colder than normal outside, and you just want something hot to warm you up? That’s what this soup is for. It has a zesty beef broth and is packed with nutrition that your body (and your taste buds) is going to love.

This is the perfect recipe for busy days when you just can’t find the time for a really difficult recipe. There are a few simple steps and then dinner is ready!

Feel free to change things up and use your favorite types of meat. This would taste amazing with some spicy sausage or milder with ground turkey. Another popular choice is to use thin slices of steak or cubed beef stew meat.

The ground beef is just a classic vegetable soup combination and my kids loved it! 

How To Freeze The Soup

This is an excellent soup to make ahead and freeze for your family. When you are ready to reheat it, just let it thaw in the refrigerator overnight. Then, heat it up on the stove or slow cooker.

Here’s how to freeze the soup: 

  1. Cook the soup completely first, then let it cool completely. 
  2. Place the soup in a gallon-size resealable plastic freezer bag and seal it completely. 
  3. Lay it flat on a baking sheet and place the baking sheet in the freezer. 
  4. Keep it in the freezer overnight, or as long as it takes for the soup to freeze completely. 
  5. After it is frozen, you can remove the baking sheet. 

One more tip: label the resealable bag with the recipe name and the date so that you know when to cook it. This will last about 3 months in the freezer.

Low-Carb Vegetable Beef Soup Meal Prep 

This is the perfect soup to make for meal prep too. Just store it in your airtight meal prep containers. It’s really easy to reheat, you can do it on the stove or in the microwave. 

This soup will last about 3 days in the refrigerator. 

You could even turn this into a slow cooker recipe. Just brown the ground beef and add all the ingredients to the slow cooker. Then, cook on low for 4-6 hours.

How Do You Thicken Keto Vegetable Beef Soup? 

This is a very thin soup. If you want to thicken it, you can try to add a bit more tomato paste. Just be aware that this will also increase how many carbs are in each serving. You can also just keep adding more veggies. They will soak up some of the broth and make it thicker. 

What To Serve With Vegetable Soup

With all of the vegetables and meat, you won’t need to add many things to make this a filling meal. This would taste perfect with some low-carb garlic knots or a keto grilled cheese. 

How Do You Make Vegetable Beef Soup From Scratch? 

This recipe is incredible! Even if you have never made soup before, you’ll be able to make this one.

Ingredients:

  • Ground beef
  • Frozen cauliflower florets
  • Cut green beans (I used frozen)
  • Frozen, peppers, onions and celery mix
  • Minced garlic
  • Tomato paste
  • Italian seasoning
  • Beef broth
  • Salt and pepper to taste

Instructions:

The very first step is to brown the ground beef. I do this in a separate skillet so that I can drain the excess grease from it before adding the rest of the ingredients.

Stir the onions, peppers, and celery mixture into the pot.

Next, add the Italian seasoning to the ground beef mixture.

Add just a tablespoon of tomato paste to the soup next.

Next, add as much minced garlic as you want. I suggest adding at least a teaspoon of minced garlic.

Mix in the cauliflower florets and green beans. The easiest way to do this is to use frozen vegetables. It saves on prep time.

Pour the beef broth into the pot to cover the ingredients.

Reduce the temperature to a simmer, and simmer covered for 25-30 minutes until the vegetables are tender and cooked through.

  • 2 tbsp Tomato Paste
  • 2 tsp Italian Seasoning
  • 6 cups Beef Broth

  • Cook the ground beef in a large pot over medium-high heat until completely browned. Drain any excess fat.
  • Stir the onions, peppers and celery mix into the pot.
  • Add the Italian seasoning, minced garlic, tomato paste, and salt and pepper to taste to the pot and stir well to combine.
  • Mix in the cauliflower florets and green beans.
  • Pour the beef broth into the pot to cover the ingredients
  • Reduce the temperature to a simmer, and simmer covered for 25-30 minutes until the vegetables are tender and cooked through.
