Low-Carb White Chocolate Carrot Cake Balls

Take everything you love about carrot cake and turn it into bite-sized treats! These carrot cake balls are covered in white chocolate and taste like a decadent truffle – but they’re shockingly low in carbs!

Carrot Cake Balls 

These white chocolate-coated carrot cake balls are the best versions of carrot cake. Instead of a complicated, layered cake with cream cheese frosting, these cake balls are coated in white chocolate and dusted with cinnamon.

It’s almost impossible to stop at just one. Thankfully, there are only 3 grams of net carbs in each serving so that you can indulge in a few! 

These carrot cake balls are made with almond flour (not almond meal). So, they are naturally gluten-free.

They are the perfect dessert to share with anyone who is gluten-sensitive or intolerant. I’ve made another carrot cake-inspired dessert before, too!

White Chocolate Carrot Cake 

My favorite type of white chocolate to use as the coating is from Lily’s. It’s so rich and creamy and it doesn’t have any funky aftertaste.

I’ve used it to make other desserts. In fact, my keto white chocolate peppermint bark tastes better than candy bars. Everything about these cake balls is amazing!

As you bite into them, your teeth sink into the creamy white chocolate. Then, the soft and aromatic carrot cake fills your mouth.

There are even chopped pecans mixed into the moist carrot cake. It’s a conglomeration of taste and texture that makes them absolutely irresistible. 

Low-Carb Truffles 

These tasty little cake balls are perfect for any occasion, any time of year. You might associate them as a spring-time dessert, but they really fit in well with any party or season. Place them in a decorative tin and give them away as a teacher appreciation gift, hostess gift, or housewarming gift. 

Or serve them as a dessert after dinner. It’s really easy to make a big batch of them, so serve them at a big family dinner (like an Easter dinner).

How To Store Cake Pops 

You should store the carrot cake balls in an airtight container and keep them at room temperature or colder. They will stay fresh at room temperature for about three days.

Can you freeze carrot cake balls? Yes, you can! When you’re ready to eat them again, let them thaw in the refrigerator overnight.

Low-Carb White Chocolate Carrot Cake Balls Ingredients

Ingredients

  • Almond Flour 
  • Baking Powder 
  • Eggs
  • Swerve Confectioner’s Sugar Substitute 
  • Oil 
  • Cinnamon 
  • Grated Carrots 
  • Chopped Pecans 
  • Cream Cheese 
  • Heavy Whipping Cream 
  • Lily’s White Chocolate Baking Chips
  • Coconut Oil 

Directions 

Shredded Carrots

Preheat the oven to 350 degrees. Add the almond flour, baking powder, eggs, Swerve, oil, cinnamon, carrots and pecans to a mixing bowl, and blend until well combined.

Spread the mixture into a well greased 9×9 baking dish. Bake for 20-25 minutes until cooked through. Let the cake cool to room temperature.

Adding cream cheese to the carrot cake mixtureCrumble the cake into a large mixing bowl. In a separate bowl, blend together the cream cheese and heavy whipping cream until smooth.

Put the cream cheese mixture into the bowl with the crumbled cake.

Knead the mixture together to combine well. Form the cake mixture into 20 evenly sized balls, and place into a parchment lined baking dish or sheet.

Chill for 2 hours.

Dipping the carrot cake balls in the white chocolate

Add the white chocolate chips and coconut oil to a microwave safe bowl, and heat for 30 seconds at a time until melted and smooth.

Dip the chilled balls into the chocolate, and place back onto the parchment paper to allow the chocolate to set.

Sprinkle with additional chopped pecans while the chocolate is still wet if desired.

Ingredients
  

  • 1 1/4 cups Almond Flour
  • 2 tsp Baking Powder
  • 2 large Eggs
  • 1 cup Swerve Confectioner Sugar Substitute
  • 1/2 cup Oil
  • 1 tsp Cinnamon
  • 1 cup Grated Carrots
  • 5 ounces Cream Cheese softened
  • 1/4 cup Heavy Whipping Cream at room temperature
  • 1 cup Lily's Whtie Chocolate Baking Chips
  • 2 tsp Coconut Oil

Instructions
 

  • Preheat the oven to 350 degrees.
  • Add the almond flour, baking powder, eggs, Swerve, oil, cinnamon, carrots and pecans to a mixing bowl, and blend until well combined.
  • Spread the mixture into a well greased 9x9 baking dish.
  • Bake for 20-25 minutes until cooked through.

  • Crumble the cake into a large mixing bowl.
  • In a separate bowl, blend together the cream cheese and heavy whipping cream until smooth.
  • Put the cream cheese mixture into the bowl with the crumbled cake.
