Heavy whipping cream is the secret to flavorful homemade chicken nuggets. If you can’t eat dairy, then I suggest replacing the heavy cream with coconut cream. It’s just as high in fats but has none of the lactose.
You should also use chicken thighs, not chicken breasts. Dark meat retains more moisture and doesn’t dry out as it is cooked or air-fried. If you try this recipe with chicken breasts, the nuggets will turn out much too dry.
Gluten-Free Chicken Nuggets
Grind some pork rinds into crumbs and use this as the gluten-free coating for your chicken nuggets. Just make sure and use unflavored or plain pork rinds. Many flavored pork rinds also contain extra sugar.
The parmesan cheese also gives the nuggets a delightful crunch! Shred the parmesan cheese at home for the best results and freshest flavors.

Large eggs
Heavy whipping cream
Almond flour
Pork rind crumbs
Parmesan cheese grated
Boneless skinless chicken thighs cut into pieces
Paprika
Garlic powder
Onion powder
Italian seasoning
Salt and pepper
Instructions:
Preheat the air fryer to 400 degrees.
In a bowl, whisk together the eggs and heavy whipping cream.
Place the almond flour into a shallow dish.
Mix together the pork rind crumbs, parmesan cheese, paprika, garlic powder, onion powder, Italian seasoning and salt and pepper to taste in a separate shallow dish.
Dip the chicken pieces into the almond flour, then the egg mixture, and finally, coat in the crumb mixture.
Place onto a greased baking tray, and cook for 10 minute, or until golden brown and cooked through completely.
