Easy Keto Banana Pudding
I love recreating recipes from my childhood into low-carb and keto-friendly versions.
I made a low-carb version of a strawberry shortcake that I and my kids love to make whenever we crave strawberries. I’ve also made my favorite lunch food – keto hot pockets! They are just as delicious and don’t take much effort to prepare. (Plus, they are freezer-friendly too!).
When I was a kid, I couldn’t get enough of banana pudding. That’s my favorite flavor of all time. Now that I’m on the keto diet, I recreated this recipe with sugar-free ingredients. It still has the same light flavor and melts on my tongue the same way – but there are just 3 grams net carbs in each serving.
Are Bananas Keto
Nope, bananas are not keto-friendly. One small banana has 20 grams net carbs. Definitely not something you want to eat if you are on a low-carb diet.
That’s why I used banana extract instead. It’s all the same banana flavors, without the sugar and carbs. You can’t tell that there aren’t bananas in this incredibly light and creamy pudding.
Keto Banana Cream Pudding
One of my favorite things about this recipe is how creamy it is! Use heavy whipping cream – that is what will make it extra velvety. You also use a confectioner’s sugar substitute. Don’t try to use a liquid or granular sweetener instead. It won’t work as well.
To achieve the pudding consistency, you need a powdered sugar substitute.
I just love that this is a no-bake dessert! It does involve a small bit of time over the stove in order to temper the egg yolks. But you won’t have to use the oven at all. It takes about 2-3 hours for this pudding to set completely in the refrigerator.
This isn’t a last-minute recipe – give it plenty of time to chill so that it reaches the perfect texture.
Sugar-Free Banana Pudding
This is a very popular recipe for my kiddos. In fact, it’s so kid-friendly that I often double it so that they can each enjoy a bowl or a small cup of it too.
There are quite a few different ways to eat this pudding. I like to grab a spoon and just enjoy it like it is. Or, you can serve it with some keto-friendly vanilla wafer cookies.

Can You Freeze Pudding
Yes, you can freeze this pudding. It will change to a consistency that resembles a no-churn ice cream. To freeze it, store it in a freezer-safe food storage container and then wrap that container tightly in plastic wrap. Keep it in the freezer for up to 6 months.

Ingredients:
Heavy whipping cream
Egg yolks
Swerve confectioner sugar substitute
Vanilla extract
Banana extract
High key vanilla wafer cookies for garnish
Whipped cream for garnish
Instructions:
Place the heavy whipping cream into a saucepan over medium low heat on the stove, and heat until beginning to steam, but not boiling.
Remove from the heat, and allow the cream to cool until you can touch it with your finger.
Whisk the yolks together in a bowl, and slowly add in some of the warm cream, whisking as you do.
Once the egg yolks have been tempered with the warm cream, return the saucepan to the heat, and pour the egg mixture in, whisking constantly as you do.
Add in the sugar substitute, and stir to combine. Simmer the mixture, stirring often until thickened to a pudding consistency.
Remove from the heat, and stir in the vanilla and banana extracts. Continue to cool and whisk the mixture for 5 minutes.
Place a layer of plastic wrap firmly down against the top of the mixture in the saucepan, this will prevent a film from forming.
Chill for 2-3 hours and serve garnished with whipped cream and High Key vanilla wafers.
