This is the crispiest thin crust pizza you’ll ever make – and it’s keto-friendly! Keto cottage cheese flatbread pizza is the perfect lunch.

There are two kinds of people in the world – those that like a crispy thin crust pizza and those that like the thicker pan ones. Well, this recipe is for all you thin crust lovers out there!

Keto Cottage Cheese Flatbread Pizza

The crust is made (surprisingly) without any flour of any kind, at all! It’s crispy because it’s made with just cottage cheese, eggs, and spices.

So the result is more like a crispy cracker than a flour-based crust. Every bite is so satisfying.

It doesn’t taste like almonds or coconuts. In fact, the crust tastes like Italian-seasoned crackers.

It’s so good that it lets the sauce and cheese stand out as the dominant flavors. 

Cottage Cheese Pizza 

In order to make the cottage cheese pizza crust, you’re going to need either a blender or a food processor. Blending the eggs and cottage cheese together removes the curds from the cottage cheese and incorporates the eggs into the batter.

The way, the crust is completely uniformed, without bits of stuff all in one place. You don’t have to use a food processor.

You can use an immersion blender or a Magic Bullet. Just make sure you use something that has blades because it will chop up the cottage cheese and help it mix with the eggs completely.

You can also change the flavor of the crust, too! I used garlic and Italian seasoning, so I kept it simple and recognizable.

But if you want the crust to be spicer, add some red pepper flakes. Or add some Cajun seasoning to make the crust really pop with flavor! 

If you want to make a breakfast pizza, then sweeten the crust with some Swerve brown sugar substitute and top the pizza with scrambled eggs, cheese, and bacon.

Keto Pizza Toppings 

One of the easiest ways to customize the flatbread pizza is to change the pizza toppings. I kept it simple and just added sauce, pepperoni, and cheese.

Remember, whenever you add more toppings, you’ll also be adding more carbs, so you will have to recalculate how many carbs are in each serving. 

What are your favorite keto-friendly pizza toppings? Try this keto pizza with some olives, ground sausage, salami, or some bacon.

For some color, add some green bell peppers. You can even add a few pieces of pineapple (but only a few, since it is really high in natural sugar and carbs. 

Keto Sides 

Keto cottage cheese flatbread pizza tastes delicious with classic sides like keto garlic knots. For something cold, add some easy keto broccoli salad to the table, or add some keto TikTok mini peppers and cucumber salad for more color.

Some keto dinner rolls and fluffy cauliflower mash will also taste perfect with the flatbread pizza, too.

Keto Cottage Cheese Flatbread Pizza Ingredients

Ingredients

  • Cottage Cheese
  • Eggs
  • Garlic Powder
  • Italian Seasoning 
  • Low-Carb Marinara Sauce 
  • Pepperoni Slices 
  • Shredded Mozzarella Cheese

Directions 

Adding the crust ingredients to the food processor

Preheat the oven to 350 degrees, and line a baking sheet with parchment paper. Add the cottage cheese, eggs, garlic powder and Italian seasoning to a food processor, and blend until smooth.

Spread the mixture out onto the baking sheet.

Bake for 30-35 minutes, or until the edges are beginning to brown and turn crispy.

  • 1/3 cup Low-Carb Marinara Sauce
  • 1/4 cup Pepperoni Slices
  • 1 1/2 cups Shredded Mozzarella Cheese
