Whenever you’re craving pizza, make these little poppers instead. They have the same bold flavors, and you can customize them to taste just like your favorite pizza!

Seriously, anytime is a perfect time for these stuffed peppers! Since they only bake for 15 minutes, you can eat them for lunch, make a fun dinner, or serve them as a last-minute party app. 

Mini Pepper Pizza Poppers

Stuffed peppers are incredibly delicious! But if you get frustrated with eating large bell peppers, then you’ll really love these. 

Low-Carb Pizza Pepper Poppers

I used mini bell peppers (also called sweet peppers) and sliced them in half lengthwise. They are the perfect size to pick up with your fingers and eat in just a few bites. 

These little pizza poppers are a fun recipe to make with your kids, too. Just prep the peppers for them and let them customize and stuff their own.

This recipe is for stuffed pepperoni pizza poppers. (Talk about a tongue twister!) But there are a bunch of different ways to change this recipe up. 

Low-Carb Pizza Pepper Poppers

Use some crumbled Italian sausage instead of pepperoni slices. Or, fill them with shredded pepperjack cheese instead of mozzarella cheese. If you want them to have some spice, then add some diced jalapenos and red pepper flakes on top. 

Remember to always read the ingredient label and make sure you’re using sugar-free pizza sauce! 

Stuffed Mini Peppers

You can make these stuffed mini peppers ahead of time and eat them in your weekly meal prep. Store them in an airtight food storage container and keep them in the fridge for up to three days. 

Low-Carb Pizza Pepper Poppers

I suggest reheating them in the air fryer or oven if you want the peppers to stay crispy. If you reheat them in the microwave, they will soften. 

Stuffed Mini Sweet Peppers

Since these pizza stuffed mini peppers are topped with pepperoni slices, they make a filling and complete lunch. You don’t have to add anything to it to make it a full meal.

Even so, some keto garlic knots will taste delicious with them! If you want to serve these peppers for dinner, I suggest adding some keto crack slaw, creamy keto Tuscan sausage skillet, or low-carb cilantro lime salmon skewers to the table with them.

They are tasty entrees that have a lot of similar flavors and spices. 

Low-Carb Pizza Pepper Poppers Recipe 

Here are the ingredients to make these crispy and cheesy pizza pepper poppers. The exact measurements and instructions are in the printable recipe card, just a little below.

Makes 24 mini peppers
Prep time: 10 minutes
Cook time: 15 minutes

Ingredients:

Mini bell peppers
Rao’s pizza sauce
Shredded mozzarella cheese, divided
Mini pepperoni
Grated parmesan cheese
Italian seasoning
Garlic powder

Instructions:
Preheat the oven to 375 degrees and line a baking sheet with parchment paper.

Spread a small amount of pizza sauce along the bottom of each mini peppers.

Top the peppers with shredded cheese and mini pepperoni.

Sprinkle parmesan cheese, Italian seasoning, and garlic powder over the top of all the peppers.

Place the pan in the preheated oven and bake for 10 to 15 minutes, until the cheese is melted and the peppers are softened.

  • 12 Mini Bell Peppers cut in half lengthwise, with seeds removed
  • 1/2 cup Sugar-Free Pizza Sauce
  • 2 cups Shredded Mozzarella Cheese
  • 1 package Mini Pepperoni Slices
  • 1 tbsp Grated Parmesan Cheese
  • 1 tsp Italian Seasoning
  • 1 tsp Garlic Powder
