Stuffed peppers are incredibly delicious! But if you get frustrated with eating large bell peppers, then you’ll really love these.
I used mini bell peppers (also called sweet peppers) and sliced them in half lengthwise. They are the perfect size to pick up with your fingers and eat in just a few bites.
These little pizza poppers are a fun recipe to make with your kids, too. Just prep the peppers for them and let them customize and stuff their own.
Pizza Poppers
This recipe is for stuffed pepperoni pizza poppers. (Talk about a tongue twister!) But there are a bunch of different ways to change this recipe up.
Use some crumbled Italian sausage instead of pepperoni slices. Or, fill them with shredded pepperjack cheese instead of mozzarella cheese. If you want them to have some spice, then add some diced jalapenos and red pepper flakes on top.
Remember to always read the ingredient label and make sure you’re using sugar-free pizza sauce!
Stuffed Mini Peppers
You can make these stuffed mini peppers ahead of time and eat them in your weekly meal prep. Store them in an airtight food storage container and keep them in the fridge for up to three days.
I suggest reheating them in the air fryer or oven if you want the peppers to stay crispy. If you reheat them in the microwave, they will soften.
Stuffed Mini Sweet Peppers

Shredded mozzarella cheese, divided
Mini pepperoni
Grated parmesan cheese
Italian seasoning
Garlic powder
Instructions:
Preheat the oven to 375 degrees and line a baking sheet with parchment paper.
Spread a small amount of pizza sauce along the bottom of each mini peppers.
Top the peppers with shredded cheese and mini pepperoni.
Sprinkle parmesan cheese, Italian seasoning, and garlic powder over the top of all the peppers.
Place the pan in the preheated oven and bake for 10 to 15 minutes, until the cheese is melted and the peppers are softened.
