Do you ever just crave enchiladas? Maybe it’s the spices from the red sauce, or maybe you’re a bigger fan of the green sauce. Either way, I think we can all agree that it’s good stuff!

Thankfully, enchilada sauce is naturally low in carbs. So it’s pretty simple to use it to make some really delicious recipes! And this keto enchilada casserole is one of my favorites!
Even if you think you don’t like zucchini noodles, you’ll love how the flavors from the sauce completely cover up the taste of the zucchini.
Keto Beef Enchilada Casserole
Whenever I make beef enchilada recipes, I use red enchilada sauce. If I make chicken enchilada recipes, I’ll use green enchilada sauce.

It’s perfectly fine to mix things up and use spicy chorizo, or a mixture of ground chicken or ground turkey with the ground beef. The incredibly aromatic spices will make almost any type of ground meat in this recipe taste perfect!
Zoodles Recipe
Zucchini noodles are a wonderful way to replace pasta on a keto or low-carb diet. They will always taste like zucchini, so if you don’t like that flavor, just use lots of spices and sauces.

Use zucchini noodles to make things like Low-Carb Chicken Zoodle Lo Mein, or a spicy Keto Cajun Shrimp and Zoodles Alfredo. Remember, when it comes to zoodles, spices and sauce are your friend.
That’s why I used enchilada sauce and other spices in this enchilada casserole.
How To Make Zoodles
There are two ways to make zoodles. The first way is to use a spiralizer and make zoodles fresh at home. Another (faster) option is to just buy and use frozen zoodles.

If you steam frozen zoodles, make sure you drain them really well and remove as much water as you can from them before you bake them in the casserole. If you don’t, the casserole will be a watery mess.
What To Eat With Zoodles
This enchilada casserole is an entire meal in one dish. You don’t have to add anything on the side with it. If you want to, you could make some Keto Taco Rice. It’s a classic thing to eat with Mexican food.

Keto Enchilada Casserole With Zoodles Recipe
Here are the ingredients to make this cheesy keto taco zoodle casserole. The exact measurements and instructions are in the printable recipe card, just a little below.

Ingredients:
Ground beef
Onion
Red bell pepper
Minced garlic
Chili powder
Paprika
Cumin
Oregano
Cherry tomatoes
Red enchilada sauce
Shredded monterey jack cheese
Cilantro and lime wedges
Instructions:
Add the ground beef, peppers and onions to a skillet over medium high heat. Saute until the vegetables are softened and meat is completely browned. Drain the excess fat.

Preheat the oven to 350 degrees.

Stir the minced garlic, chili powder, cumin, paprika, oregano and salt and pepper to taste into the meat mixture, and saute 30 seconds.

Pour the enchilada sauce into the skillet.

Remove the skillet from the heat, and mix together the meat mixture with the zucchini noodles and cherry tomatoes.

Spread the mixture into a well greased baking dish, and sprinkle with the cheese.

Bake for 15 minutes, or until the cheese is melted and the zucchini noodles are tender.
Garnish with chopped cilantro and lime wedges before serving.

- 2 cups Zucchini Noodles
