There are a lot of different ways to cook roll-ups. You can make them in the air fryer, bake them, or fry them in a pan. I used a frying pan because it’s just so simple!
You could eat them raw, but I love how they taste when the brown sugar substitute caramelizes – it really makes the gingerbread flavors stand out.
Quick tip: Use tongs to turn the roll-ups. It’s easier to grab them with tongs than trying to flip them over with a spatula.
Be gentle. If you squeeze too hard, you might cause the filling to leak out.
Best Keto Tortillas
To make sure you keep the carb count low, only use small street taco-sized tortillas. There are really large tortillas that will have more carbs in them.
If you want to cut back on carbs even more, you could cut the tortillas in half and make them bite-sized!

There are so many ways to make roll-ups! These gingerbread roll-ups are similar to another dessert recipe I love – keto crispy cinnamon cream cheese roll ups.
They have the same cream cheese filling, but are coated with cinnamon sugar instead of using glaze. I also love both Low-carb cream cheese peach roll-ups and crispy keto blueberry cream cheese roll-ups when I’m craving something sweet.
You can make savory roll-ups, too. I’ve made taco roll ups, club sandwich roll ups, and Philly cheesesteak roll ups.
How To Store Roll-Ups
Store leftover keto gingerbread roll-ups in an airtight container and store them in the refrigerator for up to three days.
Can you freeze them? Yes, you can! Wrap each chilled and baked roll-up in plastic wrap or foil.
Then place them in a freezer-safe food storage bag. They will stay fresh in the freezer for up to six months.

Ingredients:
Zero carb street taco sized tortillas
Cream cheese softened
Swerve brown sugar substitute
Vanilla
Cinnamon
Ground ginger
Ground cloves
Oil
For the glaze:
Swerve confectioners sugar substitute
Vanilla
Heavy whipping cream as needed
Instructions:
Preheat the air fryer to 350 degrees.
Place the cream cheese, Swerve brown sugar substitute, vanilla, cinnamon, ground ginger and cloves into a mixing bowl, and blend until smooth.
Spread a layer of the mixture down the center of each tortilla.
Roll the tortillas closed around the fling.
Place the roll ups in well greased frying pan (I used oil) and cook for 2-3 minutes until lightly browned and crispy. Let cool.
Whisk together the Swerve and ½ tsp vanilla along with heavy whipping cream as needed to reach your desired glaze consistency.
Drizzle the glaze over the rollups, and garnish with a sprinkle of cinnamon if desired.

- 5 ounces Cream Cheese softened
- 1/4 cup Swerve Brown Sugar Substitute
- 1 tsp Vanilla
- 1 tsp Cinnamon

Glaze
- 1/3 cup Swerve Confectioner's Sugar Substitute
- 1/2 tsp Vanilla
- Heavy Whipping Cream as needed
