Tasting just like a taco, these chicken and jalapeno roll ups are low-carb, gluten-free, and perfect for lunch or Taco Tuesday.
Taco Roll Ups
In the mood for tacos, but don’t want taco salad or keto-friendly taco shells? Then I have just the recipe for you! These taco roll ups are filled with tender shredded chicken and fiery jalapenos!
They will light up your tastebuds while keeping you in ketosis. There are just 3 grams net carbs in each roll-up!
You’ll love how they taste and how easy they are to whip together. Taco chicken roll ups are the perfect lunch or last-minute dessert.
Jalapeno Roll Ups
Make them as spicy as you want! I added an entire jalapeno, but you can add a poblano pepper to it too if you want. If you prefer milder flavors, then add less jalapeno or leave it out entirely.
You can even dip the roll-ups into your favorite salsa or hot sauce. Salsa is higher in carbs (thanks to the tomatoes) so be careful with how much of it you eat.
Spicy Chicken Roll Ups
If you’re running late, then grab a rotisserie chicken from the store. You can shred it up and then add it directly to the skillet with the taco seasoning and garlic.
This is also a wonderful way to use leftover spatchcock chicken or roasted chicken that you made earlier in the week. It tastes better with shredded chicken, so I don’t recommend using canned chicken.
Easy Cheese Wraps
The cheese wraps are a cinch to make in the oven. Just bake some Mexican blend shredded cheese! You can make the cheese wraps with sharp cheddar instead, if you want.
I’ve used cheese wraps to make keto club sandwich roll ups, keto chicken enchilada roll ups, and keto philly cheesesteak roll ups. They are so handy!
What To Eat With Tacos
Since I used cream cheese, these taco-flavored roll-ups are incredibly filling. That’s why I like to eat them with one or two sides.
Keto Mexican street cauliflower is roasted to perfection. Or serve the rollups with some keto Mexican cauliflower rice.
Or add a cold bold of keto aguachile to the table. It’s a refreshing salad that has lots of amazing ingredients.
Other fantastic low-carb sides include low-carb stuffed avocado and cowboy caviar and even some creamy taco soup. Yum! Go as fancy or as quick as you like! You can’t beat a simple chopped salad, either.
