Another thing that makes this recipe so incredibly simple is that I used ground beef instead of strips of steak or roast. This saves me lots of prep time and the ground beef browns so much faster.
Plus, my kids prefer ground beef to steak. It’s easier for them to chew and they don’t have to cut it.
Thai Basil Beef Meal Prep
This is the perfect recipe for meal prep. Make a large portion of it for dinner and then place some extra portions in your meal prep containers.
Store it in the airtight containers in the refrigerator for up to 5 days.
Reheat the beef stir fry in either the microwave or in a skillet on the stove. If it is too dry, just add a few more splashes of soy sauce (or coconut aminos if you eat completely gluten-free).

There are two sets of ingredients – the actual skillet meal and the tangy sauce.
For the skillet meal, you will need:
- Ground Beef
- Chopped Asparagus Pieces
- Red Bell Pepper
- Orange Bell Pepper
- Red Chili
- Thai Basil Leaves
- Minced Garlic
For the sauce, you’ll need:
- Soy Sauce
- Chili Garlic Sauce
- Swerve Brown Sugar Substitute
- Chicken Broth
- Fresh Lime Juice
- Green Onions
Instructions:
1. Place the ground beef, bell peppers, and asparagus in a large skillet over medium-high heat. Saute until the meat is completely browned and the vegetables have softened. Drain any excess fat.
2. In a bowl, combine the ingredients for the sauce except for the green onions. Whisk to combine well.
First, add the soy sauce.
Then add the Chili Garlic Sauce.
Next, add some chicken broth.
Sweeten it with Swerve brown sugar substitute.
Don’t forget to add a splash of fresh lime juice too!
3. Add the minced garlic and red chili to the skillet with the meat mixture, and stir to combine, sauteing for another minute.
4. Reduce the heat to medium and pour the sauce over the mixture. Stir to combine and cook an additional 2-3 minutes.
5. Garnish with green onion and serve over cauliflower rice if desired.
