Chicken Salad With Cilantro
If you aren’t a fan of cilantro, don’t worry! You can replace it with fresh parsley. They are cousins and you can always replace cilantro with parsley.
This is a budget-friendly salad that you can make with affordable ingredients. In order to keep costs really low, I suggest using canned chicken breast. It’s cheap and it stays fresh in your pantry for months!
If you have leftover rotisserie chicken, or some spatchcock chicken from another meal, use that too!

If you want to make this ahead of time and use it in your weekly meal prep, I suggest storing the chicken salad separately from the dressing. This way, the crispy salad and carrots won’t become soft as they sit in the refrigerator.
The peanuts on top are completely optional. I love the salty crunch they give the rest of the salad! But, they are higher in carbs, so it’s ok to leave them out.
Asian Chicken Salad With Cabbage
The salad dressing is what sets this chicken salad apart from all the other salads you’ve ever made. It is salty, savory, with a hint of sweetness.
To keep it low-carb, use soy sauce or coconut aminos. Swerve confectioner’s sugar substitute is the best sweetener to use because it sweetens the dressing without any funky aftertaste.
If you want the dressing to have a bit of a bite to it, I suggest adding some red pepper flakes to it.
What To Eat With Chicken Salad
This is a really filling salad by itself, so you don’t need to eat much with it. If you’re craving some bread, make some cloud bread on the side (it’s really easy to customize, too).
If you’re still hungry, make a creamy bowl of keto crab rangoon casserole. It’s super rich and will fill you up.
