Easy Pumpkin Casserole
It seems like when fall hits, the business levels increase dramatically! You need an easy recipe like this that you can throw together in less than an hour. It’s a hearty recipe that is actually surprising too!
Pumpkin is known for being a dessert fruit. It seems like it’s all over donuts, lattes, and pie. So I thought I’d try to make a savory and filling meal with pumpkin. It came out perfectly! You are going to love this, even if you aren’t a huge fan of pumpkin.
Low-Carb Pumpkin Casserole
Pumpkin is not only seasonal each fall, it’s also fantastically low in carbs. It’s the perfect way to make almost any dish creamy without adding very many carbs to it.
You don’t need much pumpkin in it, either. I used about 1/3 a cup in the entire casserole. It’s just enough to add a touch of sweetness without any sugar.
Pumpkin Chicken Idea
This recipe looks and tastes like a classic cheesy chicken and broccoli casserole. When you add broccoli, make sure you are only adding broccoli florets. It’s best to use fresh broccoli florets in it.
You can use frozen, but make sure the bag says “broccoli florets” not “broccoli pieces.” The chopped stems are not as fun to eat in this casserole.
It’s also best to use pumpkin puree. Do not use pumpkin pie filling. It’s really easy to get the two of them confused. Pumpkin pie filling has spices and sugar in it.
Cheesy Pumpkin Recipe
You can also use fresh pumpkin instead of canned puree. All you have to do is chop up a pumpkin, remove all the seeds, and then roast the pumpkin pieces. Then, remove the skin and puree it all in a food processor.
The Pioneer Woman has a really simple recipe to follow. I just used canned because it was so much faster.
This recipe stores really well and is perfect for meal prep! Just store it in your airtight food storage containers and keep it in the refrigerator for up to 3 days. The cheese might harden but all you have to do is heat it up and it will become gooey again.
Cheesy Chicken Casserole
I used parmesan and mozzarella cheese for this recipe, but there is room for creativity. Use your favorite types of cheese! Yellow cheeses will show up more but taste amazing. Try it with pepper jack cheese or some extra sharp cheddar.
Either boneless skinless chicken breast or chicken thighs will work. You can also use leftover shredded pork if you have some on hand.
Low-Carb Cheesy Chicken Casserole
Another way to save time on this super-easy recipe is to just shred up a rotisserie chicken. Then, just mix all the ingredients together and bake it until it is hot and bubbly!
It’s a complete meal so you don’t have to serve much on the side. Some garlic cauliflower mash or garlic knots will taste delicious with it!

Ingredients:
Olive oil
Boneless skinless chicken thighs
Medium onion
Broccoli
Butter
Garlic
Heavy whipping cream
Pumpkin puree
Parmesan cheese grated
Mozzarella cheese shredded
Salt and pepper
Instructions:
1. Preheat the oven to 350 degrees.
2. Add the olive oil to a skillet over medium high heat on the stove.
3. Season the chicken with salt and pepper to taste, and saute until cooked through. Remove and set aside.
4. Add the onion and broccoli to the same skillet in the left over oil. Saute until softened a bit.
5. Mix the chicken and vegetables together in a well greased 9×13 baking dish.
6. Remove the excess oil from the skillet.
7. Add the butter and garlic to the skillet, and reduce the heat to medium. Saute for 30 seconds.
8. Whisk in the heavy whipping cream and the pumpkin puree. Saute until the sauce begins to thicken.
9. Mix in the parmesan cheese and 1 cup of the mozzarella cheese. Mix until melted.
10. Pour the sauce over the chicken and vegetables in the baking dish, and stir to combine.
11. Top with the remaining mozzarella, and bake for 20 minutes.
