With the unmistakable spice of adobo sauce, this is the best recipe for Slow Cooker Barbacoa Beef you’ll ever find! As it cooks slowly all day, the beef becomes tender, juicy, and bursting with flavor.
What Is Barbacoa Beef
Barbacoa beef is a popular Mexican dish made from slow-cooked, tender beef. It’s usually seasoned with fresh spices and herbs and slow-roasted until it is tender and tasty.
Barbacoa beef is usually made from beef chuck roast. If you travel to Mexico, you might see people making with lamb or goat!
And it’s traditionally seasoned with garlic, cumin, cloves, oregano, bay leaves, and dried chilies. Some recipes marinate the roast first, and others don’t.
Slow Cooker Barbacoa Beef
Honestly, traditional barbacoa beef is already keto-friendly! It doesn’t use any flour, sugar, or other high-carb ingredients. The only thing I did differently from tradition is to cook it slowly in my CrockPot instead of roasting it over an open flame.
The result is a tender, juicy, flavorful shredded beef! It tastes amazing on top of salad, inside tacos, burritos, or dig in with a fork.
As it cooks, your kitchen will fill with spicy, earthy aromas, making everyone hungry!
Keto Barbacoa Beef
Should you sear the roast before adding it to the slow cooker? Some people like to sear beef roast on the stove before slow cooking it. This locks in the juices and prevents the meat from drying out.
It also gives the roast some crispy bits that are so delicious!
But searing the roast is completely optional. You don’t have to. If you want parts to be crispy, you can sear it or spread it out on a baking sheet and broil it on high for about 15 minutes.
Then, don’t forget to shred the beef and garnish it! I garnished mine with fresh cilantro and some lime wedges.
If you don’t like cilantro, either leave it off or replace it with fresh parsley.
What To Eat With Barbacoa Beef
I like wrapping the barbacoa beef in keto-friendly tortillas and eating them like a taco. But you can also use large pieces of lettuce as wraps too.

This is the perfect way to Mexican food at home. Add some Mexican cauliflower rice on the side, along with your favorite keto tortilla chips and homemade guacamole.
Start out with some taco soup and you have a Mexican feast for the entire family.
How To Store Barbacoa Beef
This is the perfect thing to make for your weekly meal prep! Store leftover barbacoa beef in an airtight container and keep it in the refrigerator for up to three days.
Then, reheat it in a skillet or in the air fryer. If you reheat it in the microwave, the meat will soften, but that’s an option as well.
