This recipe came about after I wanted to combine all of my favorite things into one incredible appetizer. It has the delicate prosciutto, leathery sun-dried tomatoes, sweet mozzarella, and bold balsamic glaze, all in one little bite!
I love finger food, Italian food, and high-protein snacks – and this is all of that in one simple recipe.And when I say simple, I mean it!
The most time-consuming part is making the balsamic glaze. If you need to save time, make that ahead and then all you have to do is arrange the sushi, roll it up, and drizzle the glaze on top.

Deli Meat Roll Ups
Rolling up deli meat with cheese isn’t anything new. I’ve used similar ingredients to make Keto Crispy Italian Sub Roll-Ups and Keto Italian Pinwheels.
In those recipes, I used either low-carb tortillas or a cheese wrap. This time, I’m using prosciutto as the wrap and the difference is incredible!
I love how the prosciutto melts in my mouth! It’s the perfect wrap for the crispy spinach and chewy mozzarella cheese.
Usually I will tell you to go ahead and make it your own – and you still can – but these are perfect just how they are. The mozzarella, spinach, and prosciutto are perfect with the balsamic glaze.
Prosciutto Roll Ups
The first time I opened a pack of prosciutto, I didn’t know if it was raw or cooked. I had to Google, “can you eat prosciutto without cooking it?”
Don’t feel bad if you wonder the same thing. It looked like raw bacon!
But it’s safe to eat right out of the package because of the way it’s cured in salt. As it cures, the salt kills the bacteria, making it safe to eat.
Can you use a different kind of meat as the wrap? Yes, you can.
If you try to use pepperoni, it probably won’t wrap all the way around the cheese in the same way. And if you try to use deli turkey, it probably won’t stay wrapped as well.
I suggest using thinly-sliced ham as a replacement.
Keto Balsamic Glaze
Save this recipe even if it’s just so you can have the instructions for the keto-friendly balsamic glaze. You can use it over and over again.
It tastes delicious on top of keto-friendly pizza, as a salad dressing, or drizzled on top of keto-friendly avocado toast.
What’s in keto balsamic glaze? You literally mix together some balsamic vinegar and Swerve brown sugar substitute and then let it simmer in a skillet until it cooks down and thickens.
That’s it! Trust me, you don’t want to use any other kind of sweetener.
The brown sugar substitute gives it a caramelized flavor that’s essential to making the glaze taste sweet without any aftertaste.

Keto Italian Sushi Recipe

Ingredients:
- Thinly sliced prosciutto
- Fresh mozzarella
- Fresh spinach leaves
- Sun Dried tomatoes
- Italian seasoning
- Balsamic vinegar
- Swerve brown sugar substitute
Instructions:
Lay a piece of saran wrap on a flat surface. Layer 6 slices of prosciutto lengthwise in the center of the saran wrap.
Place a layer of fresh spinach leaves across the center of the prosciutto.
Top the spinach with the mozzarella, sun dried tomatoes and a sprinkling of Italain seasoning.
Carefully and tightly roll the prosciutto up over the filling, and secure in the saran wrap.
Repeat the steps above to create another sushi roll. Place the sushi rolls in the fridge to chill for 1 hour.
While the rolls are chilling, add the balsamic vinegar and Swerve to a skillet over medium heat, and simmer until thickened. Remove from the heat and let the balsamic glaze cool.
With a sharp knife, slice the rolls into individual pieces of Italian sushi.
Plate the Italian sushi, and drizzle the pieces with balsamic glaze before serving.
