Enjoy them for lunch, snack, or serve them at a party – either way, keto Italian pinwheels are low-carb but big on flavor!
Italian Pinwheels
If you love Italian salads or sandwiches, these Italian pinwheels will become your new favorite snack! With just 5 grams of net carbs in each serving, you can eat them guilt-free.
There are a lot of things to love about the pinwheels.
The sun-dried tomatoes add a sweet and zesty flavor, while the two types of Italian meat (salami and pepperoni) amp up the flavor. But what really sets them apart is the fresh basil. Its earthy sweetness can’t be topped!
Keto Italian Food
Are you a fan of Italian food? There’s so much to love about the combination of Italian herbs and tomatoes. The parsley, basil, thyme, and oregano taste incredible in everything from soup to casseroles and pasta dishes.
Any Italian recipe you make will taste perfect with the pinwheels. Start out with an easy soup like keto Italian wedding soup. It’s made with meatballs in a savory broth.
If you’d like a filling meal, make keto Italian sub casserole. It’s a cheesy dish with the same Italian meats that are in the pinwheels.
How about pasta? When you use low-carb pasta – like the kind in my keto Tuscan shrimp – you can enjoy noodles even on the keto diet!
Meat Cheese Pinwheels
There is a lot of room for creativity in these pinwheels. Use any type of deli meat and sliced cheese that you want.
I used salami, pepperoni, and mozzarella. The mild-tasting mozzarella lets the bold Italian meats stand out.
Browse the deli section and try different types of sliced cheese. And ask them to slice it extra thin. Thin-sliced cheese is easier to roll up in the tortillas.
If you change the type of meat you use, just be careful not to pick a type of meat that has added sugar. Stay away from anything with “maple” or “brown sugar” in the name.
Best Keto Tortillas
Use any type of keto-friendly tortilla you want, as long as they are large. If you use a street-taco-sized tortilla, you’ll have enough ingredients to use three or four tortillas instead of just two.
My favorite keto tortillas are made from Mission brand. They are easy to find at any grocery store, including Walmart! I also like tortillas that are made with cauliflower because they are higher in fiber, which lowers the net carbs.
How To Store Pinwheels
Make these pinwheels before your next party or add them to your weekly meal prep! Store the sliced pinwheels in an airtight container and keep them in the refrigerator for up to three days.
They are safe to eat after three days, but the tomatoes will soften the basil and lettuce, so they won’t be as crunchy.
In fact, it’s best to store the pinwheels in the refrigerator unsliced and wrapped in plastic wrap. This will keep all the ingredients from being exposed to the air and keep the tortillas wrapped tightly.
