Baked Cottage Cheese Flatbread
Yes, you really can make delicious flatbread with cottage cheese. I know, it seems kinda strange at first but the cottage cheese actually adds flavor and keeps the flatbread from being too dry or crumbly.
This will become your go-to flatbread recipe to make for lunch or dinner. It comes together in 10 minutes and bakes in 30 minutes.
It’s a super basic recipe with a lot of room for creativity and making it your own. I kept it simple with just garlic, Italian seasoning, butter, and some Everything bagel seasoning.

Keto Flatbread
I think the flatbread is perfect if you follow the recipe exactly as I wrote it. But if you want to change it up a bit, I have a few ideas.
Add some protein. Sprinkle the top with shredded chicken or pulled pork. Or make a breakfast flatbread by sprinkling some scrambled eggs and sausage on top.
You could also add fresh herbs on top. Some fresh basil and parsley leaves will add color and flavor.
Easy Keto Breads
I’m a huge fan of making flatbreads. They are some of the easiest types of bread that you can make.
All you have to do is mix the ingredients, roll out the dough, and then bake it. What’s easier than that?
My keto chicken pesto flatbread is so filling that you can eat it for lunch without any other sides. And when I want to eat something that’s both salty and sweet, I make some keto cranberry brie flatbread.

What To Eat With Flatbread

How To Store Flatbread
If you have leftover flatbread, I suggest storing it in an airtight food storage container in the refrigerator. It will only stay fresh for about 3 days.
To make the bread last the longest, I suggest freezing it. Place the flatbread on a baking sheet in a single layer and put the baking sheet in the freezer.
Once they are frozen solid, place them together in a freezer-safe food storage bag. They will stay fresh in the freezer for up to 6 months.

Preheat the oven to 350 degrees, and line a small baking sheet with parchment paper.
Blend together the cottage cheese, eggs, Italian seasoning and garlic powder in a bowl until well combined.
Spread the mixture onto the baking sheet, and bake for 30-35 minutes, or until the edges are getting crispy and the flatbread easily pulls away from the parchment paper.
Allow the flatbread to cool, and then brush with the melted butter and sprinkle with the Everything bagel seasoning.
Slice to serve.
