Take your creamy cucumber salad to the next level with this cranberries and sour cream dressing. It’s tangy and zesty and slightly sweet.
Keto Salad With Cranberries
I love cucumber salads. They’re naturally low in carbs and there are so many different ways to change them up.
This one is perfect for the holidays because the green cucumbers and red cranberries incorporate Christmas colors. Plus, you can’t deny how festive dried cranberries are.
This is one of the easiest recipes for cucumber salad. All you do is slice the cucumbers and red onions, then mix it all together with the walnuts, bacon, dried cranberries, and the zesty dressing.
Creamy Cucumber Salad
We’ve got to talk about the dressing. It’s so zesty and tangy that you’ll want to think of new ways to use it!
The flavors are perfect – from the sour cream and mayo to the vinegar. Trust me, use full-fat sour cream and real mayonnaise.
You’ll notice a huge difference.
For the vinegar, you can use either apple cider vinegar or white vinegar. This dressing will taste delicious on top of a keto-friendly pasta salad or on a tomato and cucumber salad.
Keto Cucumber Salad
There are two things to remember when you make this salad. First, be careful when you slice the cucumbers.
My favorite way to slice them is to use a mandolin slice. Remember to use the safeguards that come with it so you don’t accidentally slice your fingers.
Next, don’t add the red onion until last. If you try to store sliced red onion in the refrigerator, it could make your entire fridge smell.
Do you want to help the strong flavors to calm down? Then rinse the sliced red onion under cold water.
What To Eat With Salad
This keto-friendly creamy cucumber salad will taste perfect with a bowl of low-carb Shepherd’s pie soup. Or, for something even lighter, make keto turmeric zucchini soup.
I love a soup and salad lunch. If you have some leftover keto green bean casserole bundles, heat them up!
They taste amazing with this creamy cucumber salad or munch on some keto copycat Olive Garden Breadsticks with it.
And if you really love dried cranberries, then serve this tasty salad with some keto savory cranberry pecan stuffing. It’s a little higher in carbs, but it tastes so good that it’s worth it.
How To Store Sliced Cucumbers
This is the perfect recipe to add to your weekly meal prep. It’s really important that you eat it within three days of storing it.
As the sliced cucumbers sit in the creamy dressing, they will become softer, which isn’t as appealing.
Store your leftover creamy cucumber salad in an airtight container – like a mason jar – and keep it in the refrigerator.
You could even store the sliced cucumbers with the cooked bacon in a food storage bag. Then, keep the dressing in a separate container. But if you do that, make the salad within a day or so.
