Shrimp Salad
Hey seafood fans, this recipe is for you! When you don’t really have time for a full-blown meal, but you still want to enjoy eating something light and healthy, make this recipe.
There are only four simple ingredients in the salad, and three simple ingredients in the dressing. In fact, after you make it once, you won’t need to refer to the recipe anymore.
This is one of my go-to recipes when I need to eat more protein but I don’t want to eat chicken or pork. Surprisingly, shrimp and eggs taste fantastic together.
Then, they are all topped with an Old Bay-flavored dressing. It’s the perfect combination.
Egg Salad With Shrimp
I like to hardboil an entire dozen eggs at the start of the week. Then, I can either chop them up and add them to a lettuce salad, or use them in one of my many egg salad recipes.
This egg salad with shrimp is a fun new take on a classic lunch. It’s still topped with mayo, but has the iconic burst of flavor from the Old Bay that ties the shrimp in with it.
If you love egg salad as much as I do, then I have three more recipes you should make next. Try my Keto Tomato Egg Salad with garden-fresh tomatoes.
This Keto French Onion Deviled Egg Salad is perfect for those days when you’re craving something salty. Low-carb deviled egg salad with broccoli and bacon is a really great way to sneak in more broccoli.
Easy Shrimp Egg Salad
While you can certainly cook and chop up jumbo shrimp, I suggest grabbing some cocktail shrimp from the store.
It’s already pre-cooked and deveined. All you have to do is remove the tails and chop it up!
Feel free to customize the dressing. Use Greek yogurt instead of mayo. And easily add more spice with spicy brown mustard or drizzle some Sriracha sauce on top.
What To Eat With Egg Salad
Serve your salad with some soup for a healthy lunch. This delicious shrimp egg salad will taste perfect with a bowl of low-carb Shepherd’s pie soup.
For something even lighter, make keto turmeric zucchini soup. I think this keto creamy Tuscan sausage soup will taste perfect with it.
Not in the mood for soup? If you have some leftover keto green bean casserole bundles, heat them up or munch on some keto copycat Olive Garden Breadsticks with the creamy egg salad.
How To Store Egg Salad
You can save yourself a lot of time by hard boiling all of your eggs ahead of time. Store hardboiled eggs in an airtight food storage container in the refrigerator for up to a week.
Then, after you make the salad, store it in an airtight container in the refrigerator for up to three days. It will taste better if you eat it sooner.
The celery and green onions will stay crispy in the salad for about a few days.
