Everything is made completely from scratch. You can taste the vibrancy from each ingredient.
From the bold onions and earthy mushrooms to the zangy sour cream and nutty parmesan cheese, it all works together beautifully. And since it’s made from scratch, you can change it based on the ingredients you have on-hand.
If you don’t have any turkey, use chicken breasts or chicken thighs (or even pork chops). Instead of mushrooms and green beans, use carrots and broccoli.
You can adjust the spices, add cheese, or even make it spicy. You have full control!

I love remaking popular recipes into keto-friendly versions because it means my family and I can eat together! I don’t have to watch them eat delicious food while I eat lettuce like a rabbit.
And green bean casserole is such a holiday staple that I found a few different ways to make it. This time, I added a few more vegetables and turkey to make it heartier and more filling.

Low-Carb Stuffing Casserole
Since this green bean casserole is made with veggies and turkey and lots of healthy ingredients, there are 7 grams net carbs in each serving. That’s why I suggest making this the entree or main course.
It will definitely keep you feeling full. The dairy is full of healthy fats that will satisfy you.
One quick note about the keto bread that you’ll use in this recipe. I suggest trying to find a keto-friendly bread that has thicker slices.
The really thin slices won’t give you enough bread to cut up and add to the stuffing.
What To Eat With Stuffing
This is a classic holiday dish, so serve it with your favorite low-carb holiday recipes. Start out with some keto walnut bacon brie bites.
For the main entree, make keto broccoli and cauliflower au gratin with sausage. And my keto eggnog bread pudding goes with anything – including this green bean stuffing.

Ingredients:
- Butter
- Onion chopped
- Mushrooms sliced
- Chicken or turkey broth
- Heavy whipping cream
- Sour cream
- Parmesan cheese grated divided
- Poultry seasoning
- Salt and pepper to taste
- Xanthan gum as needed
- Keto bread cut into cubes
- Chopped turkey meat
- Green beans lightly steamed
- Pork rind crumbs
Instructions:
Preheat the oven to 350 degrees. Melt the butter in a pot over medium heat. Stir in the onions, and saute for 3 minutes.
Mix in the mushrooms, and continue to saute until the vegetables have softened. Add the garlic and poultry seasoning, and saute for 30 seconds longer.
Pour in the chicken broth and heavy whipping cream. Sprinkle lightly with a bit of xanthan gum, and simmer until the sauce has thickened.
Add in the sour cream and parmesan cheese. Season with salt and pepper to taste, and add more xanthan gum if the mixture is not
thickened enough.
Combine the bread, turkey meat and green beans in a large mixing bowl. Pour the soup mixture into the mixing bowl, and stir to combine well.
Spread the mixture into a well greased 9×13 baking dish.
Stir together the pork rind crumbs and remaining parmesan cheese. Sprinkle the mixture over the casserole.
Bake for 20-25 minutes.
