Low-Carb Almond Joy Bars
It’s so much easier to refuse to buy candy bars when you make a tastier and healthier version of them at home. These keto cheesecake bars have three incredible layers and they really do taste just like Almond Joy candy bars!
If you have baked other low-carb desserts, then you probably already have all of the ingredients. You’ll need both coconut and almond flour for the crust.
I don’t recommend trying to substitute one for the other. They react differently to wet ingredients, so when you upset that delicate balance, you’ll either have a crust that is too soggy or too dry.
Honestly, this is such an easy recipe! All you have to do is follow the directions and you’ll have incredible bars that you’ll be so proud of, you’ll want to give them away as gifts!
No Bake Almond Joy Bars
Since this is a no-bake recipe, your kids can help you make it! There is one step where you’ll have to bake the crust and filling first.
But you can do that ahead of time and chill them so they’re ready when you make the bars.
Ok, so maybe it’s a mostly no-bake recipe. After the crust and filling are baked and chilled, the topping is a no-bake step.
Kids can still help with the stirring, mixing, and the topping!
Keto Cheesecake Bars
For the filling, I used two packages of full-fat cream cheese. When you’re on the keto diet, you want to eat more fat than normal, so don’t buy the low-fat cheese.
The cream cheese is easier to stir when you let it soften first. If you forget to soften it (I always do), then microwave a glass of water for a few minutes, pour out the water, and then cover the cream cheese with the hot glass.
This will make the cream cheese so soft that it’s a breeze to mix!
What are some ingredient substitutes I can make? Here are a few of the easiest things you can switch out:
- Coconut Oil – Use butter. In the keto crust, butter or coconut oil will both work evenly.
- Egg – Use 1/4 a cup of Greek yogurt as a substitute.
- Vanilla Extract – Almond extract will taste just as delicious.
- Sugar-Free Chocolate Chips – For the topping, use any type of sugar-free baking chips that you like.
There isn’t a good substitute for the coconut flakes or almond slivers since those are essential ingredients in the original Almond Joy candy bars.
Low-Carb Coconut Bars
Since this is a mostly no-bake recipe, it’s the perfect dessert to make days before the party. I suggest covering the pan of Almond Joy bars with a lid or aluminum foil to keep the air off of them.
They will stay fresh in the refrigerator for up to three days and they also freeze beautifully, too!
Store them in an airtight, freezer-safe container or bag and keep them in the freezer for up to six months.

Low-Carb N0-Bake Almond Joy Bars Recipe
Below are the ingredients you’ll need to make these low-carb no-bake almond joy bars. Exact measurements and instructions are located below within the printable recipe card below.
INGREDIENTS:
CRUST:
Almond flour
Coconut flour
Powdered sugar substitute
Coconut oil or melted butter (I used coconut oil to have more of a coconut flavor in the bars)
FILLING:
Cream cheese – softened
Egg
Granulated sugar substitute
Vanilla extract
TOPPING:
Sugar free chocolate chips
Coconut oil
Unsweetened coconut flakes
Almond slivers
INSTRUCTIONS:
1. Preheat the oven to 325 degrees F.
2. In a bowl, whisk together almond flour, coconut flour and powdered sugar substitute.
3. Stir in coconut oil or melted butter. Mix until a dough forms.
4. Spread the dough evenly into a 9×9 baking dish.
5. Bake for 15 minutes or until slightly browned. Remove and set aside for now.
6. In a separate bowl, mix together all the FILLING ingredients until you have a smooth consistency.
7. Spread the cheesecake layer onto your crust. Return to the oven for another 25-30 minutes.
8. Remove and set aside.
9. In a small bowl, microwave chocolate chips and coconut oil until melted (approx. 30 seconds).
10. Drizzle half of the melted chocolate over the cheesecake. Then layer with shredded coconut and almond slivers, followed by a drizzle of the remaining chocolate.
11. Place in the refrigerator (or freezer) to cool/set.
12. When you are ready to serve, slice into squares. ENJOY!
