Broccoli Cucumber Salad
You can see and smell the flavor before you take your first bite. This fresh and zesty salad is so good for you, but you’ll be distracted by the flavor that you won’t even know how nutritious it is.

All the fiber and vitamins in the broccoli, cucumber, pine nuts, feta cheese, and green onions are hard to beat.
And I didn’t even mention the dressing! I used a high-protein Greek yogurt with lime juice and real garlic.
All of these flavors mix and work together in one of the best ways! Use this dressing over again in any chopped salad that you whip up.
Low-Carb Broccoli Salad
This is one of those rare types of salad that tastes better as it sits in the refrigerator. So, keep your leftover broccoli salad in an airtight container in the fridge.

For the best results, I suggest eating it within about five days.
I noticed that as I left it in the fridge, the mayo and Greek yogurt started to separate, thanks to the lime juice. If this happens, give it a good stir and it will be as good as new.
This is why I like to keep my salads in a mason jar or in a salad container that seals completely. Then, all I have to do is shake the container and everything mixes together again.
Easy Cucumber Salad
Just like all my other recipes, this easy broccoli and cucumber salad can be customized so it fits your tastes. Here are a few ideas I came up with.

Not a fan of broccoli? Use cauliflower florets instead.
Don’t like pine nuts? Leave them out or use sliced almonds as a replacement.
Instead of feta cheese, use crumbled goat cheese and sour cream is the perfect swap for Greek yogurt. Oh and if you want to make it a bit spicier, use spicy brown mustard instead of Dijon mustard.
Mediterranean Salad
This broccoli cucumber salad has a lot of Mediterranean influences in it. You have the Greek yogurt, feta cheese, and the cucumber – all ingredients you’ll find in and around Greece.

For a garnish, I suggest using some fresh herbs that are also from that region. Choose from Dill, mint, or parsley.
You might notice that it’s very similar to another salad I made, my Low-Carb Greek Broccoli Salad. But in that one, I used sun-dried tomatoes, sunflower seeds, and Kalmata Olives.
If you want to make the salad dressing a bit tangier, add some olives to the salad.

This is the perfect salad to eat for lunch or to serve with your favorite entrees. Keep in mind that this broccoli cucumber salad has 8 grams net carbs in each serving.
