Cranberry Bliss Bars
This is another keto-friendly Starbucks copycat recipe that will keep you within your macros. My low-carb dessert bars recipe tastes just like the real thing from Starbucks.
The original bars are definitely not keto-friendly. Each one has 36 grams net carbs – and 26 grams of sugar!
My cranberry bliss bars only have 6 grams net carbs in each one. They have the same sweet cake-like base with the same sweet and tangy flavors.
I also topped them with icing, cranberries, and white chocolate chips. The biggest difference is that I used low-carb ingredients.
Keto Cranberry Bliss Bars
There are a few ingredients that set this recipe apart and make it so irresistible. For the base of the bars, the xanthan gum gives it that spongy texture that the bliss bars are known for.
And the addition of ground ginger gives a little bit of spice while the sour cream rounds out the richness from the confectioner’s sugar substitute.
For the topping, use full-fat cream cheese. It will make it richer and smoother.
If you don’t have heavy whipping cream, light whipping cream or even half and half will work perfectly well. The coconut oil is used to help the keto white chocolate chips to melt.
There isn’t a substitute that will work as well.
Gluten-Free Cranberry Bliss Bars
These copycat cranberry bliss bars are naturally gluten-free, too! So they’re the perfect things to take to a party if you’re not sure if anyone has any food intolerances.
This is because I used almond flour instead of flour that contains gluten. Remember to use almond flour, not almond meal.
If you use almond meal, the cranberry bars will taste a bit grainy.
Can you use coconut flour instead of almond flour? Yes, but it will take a bit of experimenting to get the levels just right.
Coconut flour absorbs more moisture, so you will have to add more liquid ingredients or else the bars will be too crumbly.

How To Store Dessert Bars
Since my cranberry bliss bars are topped with a cream cheese icing, you will need to store them in the refrigerator. Keep them in an airtight container and refrigerate them.
I suggest eating them within three days for the best results. You can freeze the bars, too.
Slice the bars and then freeze them without wrapping them in plastic wrap. This way the icing will freeze solid.
Once they are frozen solid, wrap them up in plastic wrap and place them in an airtight, freezer-safe food storage bag.

Topping

Directions
Preheat the oven to 350 degrees.
Blend together the almond flour, ¼ cup Swerve, egg, xanthan gum, baking powder, ground ginger, butter and sour cream until well combined.
Fold in the dried cranberries and keto white chocolate chips.
Spread the mixture into a 9×9 baking dish lined with parchment paper.
Bake for 25-30 minutes until lightly browned and cooked through. Cool to room temperature.
Beat together the cream cheese, ⅓ cup Swerve, vanilla and heavy whipping cream until smooth and creamy.
Spread the topping over the bars.
Sprinkle on the remaining dried cranberries and one tablespoon of the white chocolate chips.
Place the remaining chocolate chips and coconut oil into a microwave safe bowl, and heat at 30 second intervals until completely melted.
Drizzle the melted chocolate over the bars.
Allow the topping to set.
Cut the bars into pieces and serve.
