Best Flour For Keto Baking
In order to get the perfect cookie texture, I suggest using almond flour. Don’t use almond meal; it will give the orange cranberry cookies a grainy texture.
Can you swap coconut flour for almond flour? I don’t recommend doing that. Coconut flour absorbs more moisture than almond flour.
So if you try to use the same amount of coconut flour in these cookies, they will turn out too dry. And that’s definitely not good when the cookies are already pretty crispy.
I didn’t test these cookies with coconut flour. These cookies turned out perfectly with the almond flour.

- Almond Flour
- Butter
- Swerve Confectioner’s Sugar Substitute
- Vanilla
- Baking Powder
- Egg
- Orange Zest
- Natural Unsweetened Dried Cranberries
- Chopped Walnuts
Directions
Preheat the oven to 350 degrees. Cream together the butter and ⅔ cup Swerve until smooth.
Mix in the almond flour, vanilla, baking powder, egg and orange zest until well combined.
Fold in the cranberries and walnuts. Form the mixture into 15 cookies, and place on a parchment lined baking sheet.
Bake for 10-12 minutes until lightly browned and cooked through. Let the cookies cool completely.
Add the ½ cup Swerve to a bowl, and whisk in almond milk a little at a time, until a thick glaze is formed.
Drizzle the glaze over the cooled cookies, and grate on some additional orange zest for garnish if desired before serving.
