What is your favorite thing about lasagna? For me, it is the layers of three different types of cheese with Italian seasonings and marinara sauce.
Thankfully, you don’t have to give up your favorite foods when you follow a keto diet, you just have to find low-carb ways to cook them.
These keto lasagna stuffed peppers have 7 grams net carbs in each pepper, so be careful with how many of them you eat. Trust me, one half of a stuffed pepper will definitely fill you up!
Keto Stuffed Peppers
What is your favorite type of pepper to stuff? Bell peppers are the most common type to use, and that’s what I used in this stuffed peppers recipe.
You don’t have to use green bell peppers, feel free to use any color you like. They all have the same nutrition and amount of carbs.
If you want them to be spicier, you can even make them in jalapeno or poblano peppers.

What To Eat With Stuffed Peppers
I like to eat these stuffed peppers for a light lunch. Peppers, tons of cheese, and sausage all give me everything I need to eat a filling lunch. I don’t really eat much with them when I eat them for lunch.
If you want to serve them for dinner, then maybe serve them with low-carb bell pepper nachos. That will give you all the fiber and nutrition you need.
These stuffed peppers also make the perfect appetizer! Serve them with some keto bacon wrapped cabbage and some keto chili lime tortilla chips. That’s everything you need for a fun dinner with friends.
Of course, since they taste like lasagna, you’ve got to serve them with some keto garlic knots and a bowl of copycat Olive Garden salad. Now you’re Italian dinner is served!
Easy Keto Dinner
Since these stuffed peppers are made with four different types of cheese, they are incredibly filling. You don’t need to add very many sides to the table to make a complete meal.
Honestly, I like to just make a simple chopped salad and eat one of the stuffed peppers. That’s a very filling and comforting meal.
Keto Lasagna Stuffed Peppers Recipe
Here’s the list of ingredients that you’ll need to make these incredible keto lasagna stuffed peppers. Exact measurements and instructions are located in the printable recipe card just a little bit further below.

Ingredients:
Ground Italian sausage
Small bell peppers
Ricotta
Cottage cheese
Shredded mozzarella cheese
Low carb marinara sauce
Italian seasoning
Garlic powder
Egg
Parmesan cheese grated
Salt and pepper
Instructions:
Heat the oven to 400 degrees.
Cut the peppers in half lengthwise, remove the seeds and hollow them out. Place the peppers into a well greased 9×13 baking dish, and bake for 15 minutes.
While the peppers are baking, saute the Italian sausage in a skillet over medium high heat until cooked through. Drain the excess fat.
Pour the marinara in with the meat, stir to combine and set aside.
In a mixing bowl, blend together the ricotta, cottage cheese, 1 cup of the mozzarella, Italian seasoning, garlic powder, egg, parmesan cheese and salt and pepper to taste.
Remove the peppers from the oven, and dump out any moisture that make have accumulated in them.
Spread a spoonful of the cheese mixture into the bottom of each of the pepper halves.
Top the peppers with the meat mixture.
Sprinkle with the remaining mozzarella cheese.
Bake for another 15-20 minutes, or until the peppers are tender.

- 1 1/2 cups Shredded Mozzarella Cheese

- 1/2 tsp Garlic Powder
- 1 large Egg
- 1/4 cup Grated Parmesan Cheese
Instructions
