There are some traditional mousse recipes that use whipped egg whites to get that iconic mousse texture. I whipped heavy whipping cream instead I wanted something that would fill me up and wouldn’t leave me craving more sweets when I was done.
In order to keep it keto-friendly, use Swerve confectioner’s sugar substitute. This sweetener whips up perfectly and it won’t leave you with a funny aftertaste.

The best way to store leftover vanilla mousse is to put it in a sealed food storage container and keep it in the refrigerator for up to three days. After about three days, the texture will start to deteriorate.
