With irresistible sweet and tangy flavors, keto beef bulgogi is the best way to cook ribeye steak for dinner.
What Is Bulgogi Beef
This recipe hails from Korea. The word bulgogi literally translates to fire meat. Classic bulgogi is made from thin, marinated slices of meat. It’s usually made from beef grilled on a barbecue or stovetop griddle. Some people stir-fry it.
Korean BBQ beef has an unmistakably sweet flavor with umami notes mixed in. The sweet flavors definitely stand out. You might find traditional recipes made with pear, kiwi, mirin (sweet rice wine), and even plum extract.
What Cut Of Beef Is Bulgogi
Classic bulgogi beef is made with either sirloin or ribeye steak. I used ribeye steak to stay as true to the original recipe ask I could.
Remember to slice it really thinly. Keep slices less than 1/4-inch thick. I would like to ask the meat department to slice my meat 1/8-inch thick. If your grocery store has this option, definitely take advantage of it.
The secret to tender, juicy beef bulgogi is to let it marinate long enough. Let the steak marinate for at least an hour. If it can marinate overnight, that’s even better!
Keto Beef Bulgogi
Keto beef bulgogi is the perfect meal for your weekly meal prep. As the cooked beef sits in the sauce, it keeps soaking it up, which enhances the flavors even more. Store it in an airtight container and keep it in the fridge for up to three days.
The green onions might not taste very good after three days, so I like to take them off before I store them in the refrigerator.
What To Eat With Beef Bulgogi
Even though this is a Korean recipe, it will taste delicious with any Asian side dish you serve. Enjoy it with some cauliflower fried rice and a bowl of egg drop soup.
The spicy flavors from keto bang bang cauliflower will also taste delicious with the sweet beef bulgogi. Add a bowl of low-carb Asian slaw for some crunchy textures. It enhances the sweetness in the bulgogi.
Keto Beef Recipe For Dinner
There are a lot of ingredient variations you can make and still enjoy an incredible beef dinner. Instead of brown sugar substitute and soy sauce, use 1/2 a cup of sugar-free, keto-friendly teriyaki sauce.
You can leave out the onions or use any color/flavor of onion that you like. The matchstick carrots are optional too.
They add important color and nutrients to the dish, but you won’t miss them if you don’t use them.
