Macaroni and cheese is one of those comfort meals that you crave. When I went on keto I knew I’d have to find a new way to enjoy this classic recipe.
I started out making low-carb cauliflower mac and cheese. But sometimes I want to eat something that isn’t cauliflower. (There are a lot of cauliflower recipes!).
If you like baked mac and cheese with that crispy topping, then you’ll really like this broccoli mac and cheese! Instead of cauliflower, I used broccoli florets.
They have a much better texture and a slightly sweeter flavor too!

Cheesy Broccoli Casserole
This cheesy broccoli recipe is the perfect side dish! But you can also turn it into a one-pot meal, too!
Shred a rotisserie chicken or some leftover cooked chicken bread. Mix it in with the cheesy broccoli.
Then, bake it until it is heated through. Now, dinner is served.
Picky kids that normally don’t like veggies will gobble this cheesy broccoli casserole up. With four different types of cheese, it tastes more like cheese than broccoli.

Broccoli mac and cheese is the perfect side dish for any meal! If you’re going to eat it for lunch, I suggest making a salad with it.
Either dill chicken salad pickle boats or low-carb pesto chicken salad are perfect choices!

Keep extra servings in an airtight container in the refrigerator for up to three days.
Since it’s made with cream cheese, the broccoli might harden a bit. All you have to do is heat it up in the microwave and it will melt and be delicious.

Ingredients
- Broccoli Florets
- Butter
- Onion
- Garlic
- Cream Cheese
- Heavy Whipping Cream
- Shredded Cheddar Cheese
- Shredded Colby Jack Cheese
- Pork Rind Crumbs
- Parmesan Cheese
Directions
Add the broccoli to a pot of boiling water, and blanche until just becoming tender. Remove, and immediately place in an ice bath or run under cold water to stop the cooking. Drain and set aside.
Preheat the oven to 375 degrees. Melt the butter in a pot over medium heat. Add in the onions, and saute until softened. Stir in the garlic, and saute another 30 seconds. Mix in the cream cheese until completely melted.
Slowly whisk in the heavy whipping cream until well combined.
Stir in the cheddar and colby jack cheeses until melted.
Pour the cheese sauce over the broccoli in a large mixing bowl, and stir to combine.
Spread the mixture into a well greased 9×9 baking dish.
Combine the pork rind crumbs and parmesan cheese in a bowl. Sprinkle the crumb mixture over the mac and cheese.
Bake for 25 minutes.

- 2 tsp Minced Garlic
- 4 ounces Cream Cheese softened
- 1/2 cup Heavy Whipping Cream
- 1 cup Shredded Cheddar Cheese
- 1/2 cup Shredded Colby Jack Cheese
- 1/3 cup Pork Rind Crumbs
- 1/4 cup Parmesan Cheese shredded
