Keto Chili Mac
This recipe is a combination of two of my favorite childhood dinners – chili and macaroni and cheese. Turns out, these two classic dishes taste amazing together!
The rich mac and cheese sauce perfectly complements the spicy chili. It really is the best of both worlds.
You can totally make this with a keto-friendly pasta, but I used cauliflower florets instead. Not only is the cauliflower so much better for you than processed pasta, but they are a lot lower in carbs, too!
It’s a tasty way to eat more vegetables.
Cheesy Cauliflower Skillet
This is a complete meal in one dish. Just like a traditional chili, I used ground beef as the main type of meat. You can also make it with ground sausage.
If you want to make this with ground chicken or turkey, I would season it with a little more chili powder. Chicken and turkey don’t have as much flavor as ground beef.
What is the best type of cheese to use in the cheese sauce? I used shredded cheddar cheese with heavy whipping cream. If you want to change it up, use shredded pepper jack cheese for some spice.
What To Eat With Chili
This is a complete meal in one dish, so all you need to add to the table are some keto bread substitutes! To get more veggies, make some Keto Cheesy Cauliflower Breadsticks.

Spicy Cauliflower Recipe
I added jalapenos to my chili, so this dish has a bit of heat! If you want to kick up the spice even more, either add some hot sauce or sprinkle some red pepper flakes on top.
Is this recipe too spicy for you? Cut the jaleponos back or leave them out entirely. The choice is up to you!
Cauliflower Chili Mac
Keto chili mac is the perfect thing to add to your weekly meal prep. Store it in an airtight container in the refrigerator for up to three days.
You can also freeze it and enjoy it later. It will last about six months in the freezer. I suggest storing it in a resealable, freezer-safe bag if you’re going to freeze it.

Ingredients:
For the chili:
Ground beef
Onion
Red bell pepper
Green bell pepper
Jalapeno
Minced garlic
Tomato paste
Roma tomatoes
Beef broth
Chili powder
Cumin
Salt and pepper
For the mac and cheese:
Cauliflower florets cooked to a crispy tender
Butter
Minced garlic
Heavy whipping cream
Shredded cheddar cheese
Instructions:
Add the ground beef, onions and peppers to a skillet over medium high heat.
Saute until the meat is browned and vegetables have softened.
Drain the excess grease, and lower the heat to medium.
Stir in the garlic, tomato paste, chili powder, cumin, jalapeno, tomatoes and salt and pepper to taste. Saute for 2 minutes.
Pour in the beef broth, and simmer until about ½ of the liquid has been absorbed.
In a pot over medium heat, melt 2 tablespoons of butter. Stir the minced garlic into the butter, and saute for 30 seconds.
Pour in the heavy whipping cream, and simmer until thickened.
Whisk in the cheese, and stir until completely melted.
Pour the cheese sauce over the cooked cauliflower in a mixing bowl, and stir until well combined.
Add the mac and cheese mixture into the chili skillet, and stir to combine well before serving.

- 1 pound Ground Beef
- 1/2 Onion Chopped
