Cheesy Chicken Skillet
In order to keep things really easy, the only type of cheese that I used in Mexican blend cheese. But if you want to add a little more Mexican flavor to the dish, I suggest sprinkling some Cojita cheese on top.
It has a wonderfully salty and earthy flavor that reminds me of parmesan cheese. It will round out all the other flavors really well.
Since cheese is a zero-carb food, use as much of it as you want.

If you want it to be spicier, I suggest adding more jalapenos and a bit more chili powder. To make it milder, only use one jalapeno. It’s really easy to adjust this recipe to your tastes.
Keto Jalapeno Chicken
This is a wonderful way to use up leftover chicken. I like using leftover spatchcock chicken or roasted chicken in this recipe. If you use leftover chicken, just sprinkle the shredded chicken with the spices and saute them gently with the butter and spices.
That will lock the spices into the chicken.
Since it is such a cheesy recipe, I suggest storing it in an airtight food storage container for up to two days. Keep it refrigerated and it will last longer.

Ingredients:
Boneless skinless chicken breast cutlets
Olive oil
Chili powder
Cumin
Oregano
Onion powder
Salt and pepper
Butter
Minced garlic
Onion
Jalapeno peppers
Taco seasoning
Frozen cauliflower rice
Shredded Mexican blend cheese
Instructions:
Prepare the cauliflower rice according to package instructions and set aside.
Add the olive oil to a skillet over medium high heat.
Sprinkle the chicken with the chili powder, cumin, oregano, onion powder and salt and pepper to taste.
Sear the chicken evenly on both sides in the skillet until cooked through. Remove and set aside.
Reduce the heat to medium on the stove. Add the butter to the same skillet.
Stir in the onion and jalapeno, and cook until softened.
Mix in the garlic and saute for 30 seconds longer.
Place the cauliflower rice and taco seasoning into the skillet, and stir to combine well.
Sprinkle on 1 cup of the cheese, and stir until melted.
Add the chicken back to the skillet, and sprinkle with the remaining cheese. Turn the heat off of the stove, and place a lid over the skillet until the cheese has melted.
Serve garnished with parsley or cilantro if desired.

- 2 tbsp Olive Oil
- 1 tsp Chili Powder
- 1/2 tsp Cumin
- 1/4 tsp Oregano
