Low Carb Grilled Chicken Asado

This low-carb grilled chicken asado is covered in an irresistible dry rub of Mexican spices and flavored with orange and lime juice. Use it in nachos, as a filling for tacos, or eat it with a fork and a knife.

What is Chicken Asado 

It’s also called pollo asado. It’s basically a marinated and grilled chicken. The marinade is what sets it apart from other grilled chicken recipes.

As it marinates, the acid from the citrus fruit tenderizes the meat. This makes it extra juicy, even after you grill it! 

Asado has a distinct flavor because it uses a special blend of Mexican spices. My kids love it because it’s just flavorful enough without being too spicy.

The marinade sweetens the chicken and actually enhances the peppery flavors in the spices. It’s the answer to dinner when you feel like you’re getting bored with the same old things. 

Keto Chicken Asado 

After marinating the chicken, this recipe has about 3 grams net carbs in each serving. And each serving is about half of a chicken breast!

Low-Carb Grilled Chicken Asado

First, make sure you use Mexican oregano. It’s more pungent then Greek oregano and it tastes best when you cook it with chili powder.

You’ll also need Achiote powder. This is a specialty blend of annato seeds, ground chiles, cloves, and other aromatic herbs.

This is the secret ingredient that kicks the flavor up a notch. 

Pollo Asado Grilled Chicken 

You can make pollo asado grilled chicken with any cut of chicken that you have. It’s traditionally made with chicken breasts, but it will taste delicious when you use chicken thighs.

In fact, try it with chicken wings! It adds so much dimension and flavor to them. 

What type of grill is best for pollo asado chicken? You can use any type of grill.

Make them on the blackstone, outdoor grill, or an indoor George Foreman grill. You could even cook it on the stove with a grill pan. 

What To Eat With Grilled Chicken 

This grilled chicken is the perfect entree! It’s filling and wakes up your tastebuds. Serve the chicken with some cauliflower mash or a creamy green bean casserole.

Low-Carb Grilled Chicken Asado

Since this is kind of a Tex Mex meal, make some fresh guacamole to go along with it. I like serving grilled pollo asado with some skillet keto garlic butter rosemary rolls.

The buttery and herby flavors are perfect with the bold peppery flavors in the chicken. It will also taste perfect along with a few stuffed mushrooms.

How To Store Grilled Chicken 

Grilled chicken stores perfectly for three days, so use it in your upcoming meal prep. Half of a breast is one serving, but if you chop it up into smaller servings, you’ll be able to add more sides.

Low-Carb Grilled Chicken Asado

Store the chicken in an airtight container for up to three days. This is a fantastic freezer meal, too.

Wrap the cooked chicken breast in plastic wrap and place them in a freezer-safe food storage bag. It will stay fresh for up to six months.

Ingredients

  • Chicken Breasts
  • Ground Coriander 
  • Cumin 
  • Paprika
  • Mexican Oregano 
  • Achiote Powder 
  • Orange Juice 
  • Lime Juice
  • Olive Oil

Directions

Achiote Powder

Combine the coriander, cumin, paprika, oregano, achiote powder, orange juice, lime juice, olive oil and salt and pepper in a mixing bowl.

Low-Carb Grilled Chicken Asado On a Grill

Add the chicken to the mixing bowl, and marinate for at least 1 hour. Heat the grill to 400 degrees.

Place the chicken on the grill and sear for 6-8 minutes per side, or until cooked through.

  • 3 large Boneless Skinless Chicken Breasts
  • 2 tsp Ground Coriander
  • 2 tsp Cumin
  • 1 tsp Paprika
  • 1 tsp Mexican Oregano
  • 2 tsp Achiote Powder
  • Juice from Medium Orange
  • Juice from One Lime
  • 2 tbsp Olive Oil

Instructions
 

  • Combine the coriander, cumin, paprika, oregano, achiote powder, orange juice, lime juice, olive oil and salt and pepper in a mixing bowl.
  • Add the chicken to the mixing bowl, and marinate for at least 1 hour.
