Chopping up broccoli and cauliflower and adding ranch dressing might seem pretty basic. But this chopped salad has a few secrets.

The ranch dressing is both the jarred dressing and the seasoning packet. Adding sour cream gives it a tangier flavor.

The bacon, that’s where the deliciousness lives! Crumble four pieces of bacon on top for savory goodness. 

I used to think that my low-carb Amish broccoli salad was the best way to eat broccoli and cauliflower (it has bacon too!). And it still might be but this chopped salad is a close second.

Try them both and see which one is your favorite.

This salad has 6 grams net carbs in each serving. It might seem like a lot – especially for a salad – but it’s also very filling.

Ranch dressing, sour cream, and bacon are full of fats that keep you feeling full. 

The keyword for this salad is “chopped.” Chop up the broccoli and cauliflower into tiny pieces.

This makes it easier to eat. And the smaller pieces will mix better with the onions and bacon pieces.

I kept this salad basic on purpose. It gives you a lot of room to change it up and make it taste exactly how you want.

Lettuce or leafy greens are a low-carb way to add flavor and nutrition without adding carbs. Mix in some shredded cheddar cheese or even diced jalapenos for a bit more flavor and fun! 

Fresh herbs are always the best way to enhance your salad. So, if you have some fresh dill and parsley, sprinkle them in with the ranch dressing.

Remember to use full-fat sour cream. It will give you the best nutrition for your dollar. 

What To Eat With Salad

This is a versatile salad that goes with any entree you make, but I prefer it with beef. If you’re grilling some Keto Sweet and Sour Meatball Kebabs, then add this salad to the side.

It’s also perfect with Keto Patty Melts and some Keto Cottage Cheese Flatbread. But watch your carbs because the patty melts are higher in carbs than the meatball kabobs.

How To Store Chopped Salad 

In order to enjoy this salad later on in the week, store the broccoli, cauliflower, bacon, and green onions mixture separately from the dressing. Keep the dressing in its own airtight container.

  • Cauliflower 
  • Sour Cream 
  • Ranch Dressing 
  • Ranch Seasoning 
  • Bacon 
  • Green Onions

Directions 

Adding Bacon

Steam the broccoli and cauliflower pieces lightly until they are a crisp tender. Rinse under cold water to chill and drain well.

Add the broccoli and cauliflower pieces to a mixing bowl with the sour cream, ranch dressing, ranch seasoning, cheese and bacon. Stir to combine well.

Serve immediately topped with green onions, or chill before serving if desired.

  • 4 slices Bacon cooked and crumbled
  • 1/4 cup Green Onions chopped
