This versatile recipe can be eaten at any time of day. It’s a really different and fun way to eat eggs for breakfast in the morning.

It’s also a boost of protein in the middle of the day for lunch. Or you can serve it as a high-protein side dish for dinner.
But what are eggs au gratin? It’s basically sliced hard-boiled eggs covered in a cheesy sauce and topped with crushed pork rinds.
Then, it’s baked and served hot! This is a delicious replacement for potato au gratin (and it satisfies your cheese cravings, too).
Hard Boiled Au Gratin Eggs
I love making recipes with lots of cheese! I’ve made a lot of different au gratin recipes and all of them are wonderful ways to replace au gratin potatoes on a low-carb or keto diet.

But this hard-boiled au gratin egg recipe is more of a side dish. I’ve also made some high-fiber veggie au gratin sides.

Creamy Hard Boiled Eggs
This entire recipe takes about 45 minutes to make, from start to finish. It’s a little bit involved for a breakfast meal, so I suggest serving it at brunch, lunch, or dinner.

But no matter when you choose to serve it, you’ll fall in love with the cheesy, creamy sauce on top.
To make the sauce, you’ll combine heavy whipping cream with parmesan cheese and shredded cheddar cheese. All together it’s very mild, and kids love it!
If you want to make it spicier, use some pepper jack cheese. Or add some habanero cheese from the specialty cheese section.
Sprinkling in some red pepper flakes is another way to bring on the heat!
Cheesy Eggs
This recipe is full of dairy – be prepared for that in case you (or someone you know) has dairy intolerances. There isn’t a very good substitute for the dairy since it uses heavy cream and two types of cheese.

One of the things that gives it a lot of flavor is the garlic. I suggest mincing fresh garlic over the jarred garlic.
I realize the jarred garlic is a huge time-saver, but fresh garlic has a lot more flavor. If you use jarred, then feel free to increase the amount to a tablespoon.
It will give it a big boost of flavor.
How Long Do Hard Boiled Eggs Last
I like to hard boil a bunch of eggs at the beginning of the week and save them so I can use them in a bunch of different recipes throughout the week. If you leave the shell on, the hard boiled eggs will stay fresh in the refrigerator for about 7 days.

If you peel them, the hard boiled eggs are more prone to bacteria, so you should eat them within three days.
The three-day rule also applies to these cooked au gratin eggs, too. Store your leftover eggs au gratin in an airtight container and eat them within three days.

- Hard boiled eggs
- Butter
- Heavy whipping cream
- Minced garlic
- Shredded parmesan cheese
- Shredded cheddar cheese
- Crushed pork rind crumbs
- Salt and pepper to taste
Instructions:

Slice the hard boiled eggs, and layer them in a small shallow baking dish. Melt the butter in a skillet or saucepan over medium heat. Stir in the minced garlic, and saute for 30 seconds.

Pour in the heavy whipping cream, and simmer until the sauce thickens.

Add in the parmesan and cheddar cheeses, and stir until well combined and melted. Season with salt and pepper to taste. Let the sauce rest off the heat for 5 minutes.

Pour the sauce over the eggs in the baking dish, and top with the pork rind crumbs.

Bake in a 375 degree preheated oven for 20 minutes.
