Yes, there are a few extra steps. But they’re worth it because in the end, you have a flavorful meal that tastes better than anything you can get in a box or from the grocery store.

Chicken Broccoli Skillet
There’s something perfect about cooking chicken and broccoli together. Maybe it’s the way they both soak up all the flavors.

Maybe it’s the fact that they don’t overpower each other. All I know is that they are best when they are cooked together.
For this recipe, I suggest using fresh broccoli. You want to steam it until it is crisp-tender.
Frozen broccoli that is steamed will be too mushy in the skillet. And for the chicken, either slice the chicken breasts into thin strips or use chicken breast tenders.

Out of all of the Italian recipes that I’ve made, the Tuscan ones are my favorite. My Keto Tuscan Shrimp is made with spinach and keto noodles and creamy keto Tuscan salmon is also made with a creamy sauce.

I’ve even made keto creamy Tuscan chicken with coconut and spinach before, too! That recipe had all my favorite Italian flavors (and an incredible sauce), but it was missing something.

Tuscan Chicken Broccoli
I usually suggest marinating chicken breast before cooking it. But this time, you don’t have to marinate it!

As it cooks in the creamy pesto sauce, the flavors will infuse into the meat in the best way.
Should you use chicken breasts or chicken thighs? I prefer the flavor and texture of chicken breasts in the Tuscan skillet.
But boneless skinless chicken thighs will taste delicious, too. No matter which type of chicken you use, make sure you cook it completely.
Cook the chicken until it reaches an internal temperature of 165.
Chicken Meal Prep
This chicken and broccoli skillet has a creamy pesto sauce, so I recommend eating it within a day or two of making it. Store your leftover Tuscan chicken and broccoli in an airtight container and keep it in the refrigerator.

Since it has a dairy-based sauce, I don’t recommend trying to freeze it. As it thaws, it will thin down the sauce too much.

Ingredients:
- Olive oil
- Boneless skinless chicken breasts cut in half lengthwise
- Garlic powder
- Onion powder
- Italian seasoning
- Salt and pepper to taste
- Water
- Broccoli florets
- Minced garlic
- Cottage cheese
- Pesto sauce
- Cherry tomatoes sliced in half
- Shredded mozzarella cheese
Instructions:

Heat the olive oil in a skillet over medium high heat. Season the chicken with the garlic powder, onion powder, Italian seasoning and salt and pepper to taste.
Sear the chicken evenly on both sides until completely cooked through. Remove and set aside. Add the water and broccoli to the skillet, and reduce the heat to medium.

Cover and simmer until the broccoli is done to your liking.

Blend together the cottage cheese and pesto in a food processor until smooth. Saute the garlic in the skillet for 30 seconds.
Stir the cottage cheese mixture into the skillet. Season with additional salt and pepper to taste.

Return the chicken to the skillet, and toss to coat in the sauce.
Turn the heat off, sprinkle with the cheese and cover until the cheese has melted before serving.
