Yes, radishes are fantastically low-carb! In one cup of sliced radishes, there are just 3.94 grams of total carbs and when you subtract the fiber there is 2.1 grams net carbs.
If you can find ways to cook with radishes, do it! They add lots of fiber, nutrition, and flavor to dishes, without adding very many carbs.
One of my favorite ways to cook radishes (besides in this tasty salsa) is to make sauteed brown butter radishes. I’ve also made delicious corned beef hash with radishes instead of potatoes.
Keto Salsa
There are just 2 grams net carbs in each serving of this tasty salsa, and when you follow the recipe, it makes six servings!
That means there is just 12 grams net carbs in the entire batch. I kept the carb count low by using radishes instead of tomatoes.
All the other ingredients are pretty familiar – lime juice, cilantro, garlic, and jalapeno (to name a few). Store your salsa in the refrigerator in an airtight container for up to a week.
Keto Radish Salsa
You don’t need any fancy kitchen gadgets to make this salsa. If you have a food processor or a blender, it can definitely speed up the time, though.
Just add all the ingredients to the food processor and pulse a few times. It only takes a few seconds to chop everything up!
There are a lot of ways to change the recipe. If you want it spicier, add more jalapenos. If you don’t like cilantro, leave it out or use fresh parsley instead.
What To Eat With Salsa
This is the perfect dip to add to the table on Taco Tuesday! I like to enjoy a bowl of radish salsa with my keto cheesy jalapeno chicken. It has a lot of similar spices and flavors. Don’t forget to add some keto Mexican cauliflower rice with the chicken.
If you’re feeling really snacky, some keto Mexican street cauliflower taste really good with the salsa. The roasted cauliflower bites are wonderfully spicy.
And forget about tortilla chips! Nope, what you want is to make some keto chili lime tortilla chips or keto jalapeño chips to eat with the salsa.
Jalapeno Salsa
I kept this salsa pretty mild by only chopping up one jalapeno. If you want to kick up the heat, then add a chopped poblano pepper to it as well.
You can also add more color and flavor by finely dicing and adding a bell pepper.
I also use green onions, but you can use white or yellow onions instead if you that’s what you have. Feel free to be creative with the recipe.
