One of the most important ingredients in this blueberry cottage cheese salad is the sugar-free berry or blueberry yogurt. Be very selective with the kind of yogurt you use and pick the one that has the least amount of sugar and carbs.
Since most berry yogurts are sweetened with fruit, they will have different amounts of sugar.
I wasn’t sure whether to call this a parfait or a whipped salad. I used a blender to mix everything together, so you could call it a whipped dessert or salad.
Since I used yogurt, I decided to call it a parfait. But no matter what you call this keto blueberry recipe, it’s delicious!
Cottage Cheese Parfait
Trust me, you’ll want to use some kind of blender or food processor to mix everything together. There are a lot of different textures going on here and something with blades will chop and combine everything into one smooth parfait.
An immersion blender works, so does a smaller bullet blender. But you don’t have to do this step. If you don’t mind the cottage cheese curds, just give it a really good mix with a wooden spoon.
And what about the walnuts? They add a bunch of healthy fats and protein, so keep them in the salad
If you want to replace them, use pecans instead. They have a similar mouthfeel.
Blueberry Parfait
