Are you a fan of chicken pot pie? I sure am! I love the combination of cream, tender chicken, and healthy veggies.

I love it so much that I made both a keto chicken pot pie and a keto chicken pot pie soup. That’s when I got the idea to turn my favorite comfort food into one of my favorite types of lunch and finger foods.
I took a creamy pot pie filling, put it into a tortilla, and fried them. The result is finger food roll-ups that taste like a comforting chicken pot pie!
Every bite is flaky, filling, and earthy-sweet. In fact, they taste so good that you’ll come up with excuses to make them.
They are perfect for lunch, dinner, and party appetizers.
Crispy Chicken Roll-Ups
There are a few things you can do ahead of time to speed up the time it takes you to make the homemade chicken pot pie roll-ups. First, cook and shred the chicken; store your shredded chicken in an airtight container in the refrigerator.

Next, steam the frozen veggies and drain all the water from them. Next, let the cream cheese come to room temperature.
This will make it easier to mix with all the other ingredients. These crispy chicken roll-ups taste the best when they are hot, so serve them fresh.
If you make them ahead of time, reheat them in the air fryer so they are hot and crispy again.
You can flavor them with Italian seasoning, but if you want to add some heat, sprinkle some red pepper flakes into the filling.
Keto Chicken Roll-Ups
There are 3 grams net carbs in each roll-up. So, feel free to eat a few of them! You can also make changes to the roll-ups.

Just remember that if you make a bunch of changes you will probably have to recalculate how many carbs are in each one. I filled them with frozen mixed vegetables.
If you want, you can choose which vegetables to use. Try them with asparagus spears, diced carrots, zucchini, and even butternut squash.
Basically, use whatever vegetables you want!

Use your favorite low-carb tortillas for the roll-ups. Mission brand is really easy to find at the grocery store.

The street-taco sized tortillas are the perfect size for the roll-ups. Since these roll ups are made with keto-friendly tortillas, you can store them in the refrigerator and then reheat them in a skillet or air fryer.
If you reheat them in the microwave it will make the tortillas softer.
Keto Lunch Ideas
Lunch is the perfect time to eat these tasty little mini chicken pot pie roll-ups. Eat them with some keto turkey ranch pinwheels for more protein.

They also taste super good with some keto ranch popcorn chicken too! The ranch flavors go really well with the chicken pot pie roll-ups.

Ingredients
- Stree Taco-Sized Zero Carb Tortillas
- Shredded Chicken
- Frozen Mixed Vegetables
- Butter
- Cream Cheese
- Italian Seasoning
- Minced Garlic
- Heavy Whipping Cream
- Chicken Broth
Directions

Melt the butter in a skillet over medium heat. Stir in the chicken and frozen vegetables. Cover and simmer until the vegetables are tender.

Mix in the cream cheese, garlic and Italian seasoning. Stir until the cream cheese is melted and combined. Pour in the heavy whipping cream and chicken broth.
Reduce the heat to medium low, and simmer until the sauce has thickened. Season with salt and pepper to taste, and let cool for a few minutes.

Place a line of filling down the center of each tortilla, and roll closed over the filling.

Add the tortillas, seam side down into a skillet with a bit of oil over medium heat. Fry the tortillas until browned and crispy on all sides.

Serve immediately.
