Bread pudding is a dessert made with stale bread that is soaked in a custard-like mixture and then baked. The sauce then caramelizes, and the bread remains soft.
I took the classic bread pudding recipe and made a low-carb version that tastes like eggnog. It’s basically the perfect holiday dessert – even for people who don’t normally think they like drinking eggnog!

It’s the perfect thing to make when you’re hosting a holiday dinner or if you signed up to bring a dessert. Kids won’t be able to tell that it’s low-carb either, So, make it for dinner.
What is the texture? It’s kinda like a cake, if a cake was made out of chopped up bread pieces.
It’s soft and sweet and has the best flavors! Don’t forget to use low-carb white bread.
If you can find a keto-friendly bread that doesn’t have seeds, use it. The seeds will distract from the soft texture of the baked bread pudding.
Eggnog Bread Pudding
Is this made with real eggnog? Yes, it is!
Don’t buy eggnog from the store. Store-bought eggnog is way too high in carbs! Instead, make it at home.
My Easy Low Carb Eggnog Recipe is really easy to make and keeps it low in carbs. In addition to the amazing flavors from the keto eggnog, I added more spices to the bread pudding, too.
You’ll use cinnamon, nutmeg, and cloves. Don’t forget about the real vanilla, too.
It rounds out all the flavors.
What To Eat With Bread Pudding
If you’re making the bread pudding for a family dinner, then I have a bunch of other low-carb desserts that you can make with it. Start out with Keto Cinnamon Brown Sugar Zucchini Cake.

How To Make Bread Pudding Ahead
It’s best to store your bread pudding in an airtight container. Keep it in the refrigerator and eat it within three days.
You can freeze bread pudding, too. Keep it in the freezer for up to six months.
Then, let it thaw in the refrigerator overnight before heating it up.

Ingredients
- Keto Whtie Bread
- Keto Eggnog
- Eggs
- Cinnamon
- Nutmeg
- Cloves
- Vanilla
- Swerve Confectioner’s Sugar Substitute
- Chopped Pecans
Directions
Preheat the oven to 350 degrees. Add the bread pieces to a large mixing bowl.
Whisk together the eggs, cinnamon, nutmeg, cloves, vanilla and Swerve in a bowl. Pour the mixture over the bread pieces.
Add in the prepared eggnog. Stir to combine. Spread the mixture into a well greased 9×13 baking dish, and top with the pecans.
Cover with foil, and bake for 30 minutes. Remove the foil, and bake for an additional 15 minutes.
Serve with a drizzle of sugar free maple syrup if desired.

- 1 loaf Keto White Bread broked into bite-sized pieces
- 3 cups Keto Eggnog prepared
- 3 large Eggs
- 1 tsp Cinnamon
- 1/2 tsp Nutmeg
- 1 pinch Cloves
- 1 tsp Vanilla
- 2/3 cup Swerve Confectioner's Sugar Substitute
- 1/2 cup Chopped Pecans
Instructions

Preheat the oven to 350 degrees.
