Enjoy it as a dessert, breakfast, or snack. This low-carb strawberry pretzel parfait has layers of sweet and salty flavors you’ll love.
What Is A Parfait
A parfait is a layered dessert usually made with a thick, creamy yogurt and fresh fruit. And there are thousands of variations of this basic recipe.
It’s a fun way to mix up different flavors and textures. Lots of people enjoy yogurt parfaits for breakfast but they are pretty enough to make for a brunch or party.
The fun thing about a parfait is that you can make them as simple or as intricate as you want. If you’re short on time, you could just grab some Greek yogurt and mix in layers of strawberries.
But I took it a few steps further! In this parfait recipe, you’ll add a few things to the Greek yogurt to make it creamier and fluffier.
Then, you’ll make a sweet strawberry layer and salty pretzel layer. And – yes – it’s all low-carb!
Strawberry Pretzel Parfait
There are 6 grams net carbs in each serving of this rich and creamy strawberry pretzel parfait. And if you follow the recipe, it will make six servings.
If you are only making it for yourself, then I suggest making the layers separately and storing them inside individual containers. That way you can scoop out one serving at a time when you’re ready to eat it.
I love using strawberries to sweeten my keto-friendly dessert recipes. They’re incredibly good for you!
They have just as much vitamin C in them as an orange. So if you want more strawberry recipes, I suggest making either Low-Carb Strawberry Broccoli Salad or Keto Strawberry Cream Cheese Roll Ups.
Keto Pretzel Substitute
The easiest keto pretzel substitute is to just buy some keto-friendly pretzels. It saves you a lot of time and energy.
BeyondTwistz and Crisp Power make some high-protein pretzels that have the same crunch as the high-carb versions.
You could also make some keto tortilla chips. Then, crumble them and add the ingredients from this recipe.
Can you make the parfait without the pretzels? Yes, you sure can!
You can make a strawberries and cream parfait without any crunchy textures at all. It will still taste delicious.
If you leave the pretzels out, the carbs per serving will go down, too.
Parfait Layers
What is in each layer? To make the yogurt, I combined cream cheese, heavy whipping cream, Greek yogurt, vanilla, and powdered sugar substitute.
It’s almost like a cheesecake filling but not as thick or rich. For the strawberry layer, I mixed some strawberries with lemon juice and vanilla.
Then, I sweetened them with powdered sugar substitute.
Finally, the pretzel layer is a salty-sweet combination of keto pretzels with brown sugar substitute and melted butter. You could use powdered sugar substitute instead of brown sugar substitute, but I love the caramel flavor of the brown sugar version.
How To Store Leftover Parfait
I don’t recommend trying to store leftover strawberry pretzel parfait after you make the layers. If you do, the yogurt layer will soften the pretzels and it won’t be nearly as appetizing.
Instead, I suggest storing each layer in a different container. Keep the yogurt layer and strawberry layers in different containers and keep them in the refrigerator.
Use them within three days. You can keep the pretzel layer in the pantry for up to five days.
