Keto Bacon Chicken Thighs With Garlic Cream Sauce
There are a lot of different ways to describe this easy recipe. I almost called it a keto garlic chicken thighs skillet.
I also considered calling it keto Creamy Garlic Chicken with Broccoli and Bacon. Basically, it’s juicy chicken thighs with crisp-tender broccoli and crunchy bacon pieces in a creamy garlic sauce.
This is an aromatic, flavorful entree that has both your meat and veggies in one dish. And it’s ready in just 30 minutes!
You’ll love the familiar Italian flavors (with lots of garlic). I love how quickly it cooks and how I can just whip it together without stressing about complicated kitchen tactics.
It’s a basic recipe that will become a regular feature on your weekly dinner menu.
Creamy Garlic Chicken Thighs
One of the most important things to remember when you’re cooking chicken is to always make sure that it’s fully cooked before you eat it. It shouldn’t be pink at all. But the most reliable way to tell if it’s fully cooked is to take the internal temperature.
Chicken needs to cook until it reaches 165F.
Can you use chicken breasts instead of chicken thighs? Sure, you can!
I recommend marinating the chicken breasts, first. When you cook chicken breasts in a skillet, they tend to dry out a bit (even when you cook them in a creamy garlic sauce like this one).
Chicken Thighs With Broccoli
You don’t really have to add anything to the side with this meal. If you want to add something light, how about some keto garlic knots, or low-carb rosemary dinner rolls?
This chicken dinner is also the perfect time to make some cauliflower mash, roasted veggies, or a bowl of low-carb zucchini turmeric soup. Keep the side dishes light so the chicken thighs and broccoli can shine.
Best Veggies With Chicken
What are the best vegetables to cook with chicken? If you’re on the low-carb diet, keep the carbs in mind, too.
My favorites are broccoli, cauliflower, zucchini, and yellow squash. Carrots are ok in moderation and if you want to add a few to this dish, do it!
For this chicken skillet dinner, I suggest using the broccoli. It’s a natural veggie that tastes delightful with chicken.
If you don’t like broccoli, then replace it with cauliflower. It’s the next best thing.
Dairy-Free Cream Sauce
I used heavy whipping cream and parmesan cheese to make the sauce thick and creamy. It also makes it taste rich, too.
But what is the best substitute for heavy whipping cream if you can’t have dairy? I suggest replacing it with canned coconut milk.
It will give the creamy sauce the same velvety texture. And you can replace the parmesan cheese with cashew parmesan.
It won’t melt the same way, so if that’s important to you, just leave it out entirely.
