What Is Cowboy Soup
Cowboy soup is almost like a zesty vegetable soup that’s made with ground beef instead of steak. Much like chili, it has a tomato base.
In fact, a lot of people tend to think that cowboys ate a lot of chili on the open trail. And that might be true but this cowboy soup is called a soup because it has a thinner broth.
If you browse recipes for cowboy soup, you will probably find a lot of different types. They usually vary based on how spicy they are and the different kinds of veggies that the creator adds.
Some use potatoes, others add green beans and corn. But they all have one thing in common – the tomato broth, ground beef, and some kind of veggies.
Keto Cowboy Soup
I love finding new ways to sneak veggies into my recipes – and this soup would be the perfect way. But, in order to keep it low-carb, I had to make the choice between veggies and black soy beans.
If you want to eat more veggies, then I suggest cutting out the black soy beans. You could replace the soy beans with turnips or carrots.
Are Black Soy Beans Keto
Yes, black soy beans are a keto-friendly ingredient. In a 1/2 cup serving, there are only 2 grams net carbs.
They are high in both fiber and protein and are easier to digest than typical black beans.
I used the beans as a way to replace the potatoes that you usually find in cowboy soup. But you could leave the beans out and the soup will still taste just as good.
If you use black soy beans, remember to drain and rinse them off before adding them to the soup.
What To Eat With Soup
Keto cowboy soup has flavors that will taste delicious with a lot of different side dishes. For some spice, you can serve the soup with some keto jalapeno deviled eggs.
Make a salad, like my low carb caesar broccoli salad, to go with the soup. It would also taste really good with a bowl of keto Big Mac deviled egg salad, too.
And don’t forget about dessert!
Some of my favorite ones are either a slice of low-carb plain cheesecake with crumb topping or low-carb cranberry apple dump cake. Both are absolutely delicious!
How To Store Soup
Since this soup doesn’t have any pasta or cream in it, you can store it in the refrigerator and eat it throughout the week. Keep it in an airtight and spillproof container.
My favorite way to store soup is to put it in a mason jar with a lid.
Keep the soup in the refrigerator and eat it within three days. You can reheat it in the microwave, but I prefer to use the stove.

Ingredients:
- Ground beef
- Onion chopped
- Red bell pepper chopped
- Black soy beans rinsed and drained
- Canned petite diced tomatoes
- Tomato paste
- Beef broth
- Minced garlic
- Chili powder
- Cumin
- Paprika
- Oregano
- Salt and pepper to taste
Instructions:
Add the ground beef, onions and peppers to a pot over medium high heat. Saute until the meat is completely browned and the vegetables are softened. Drain the excess grease, and reduce the heat to medium low.
Stir in the garlic, chili powder, cumin, paprika, cumin and salt and pepper to taste. Saute for 30 seconds.
Mix in the tomato paste and diced tomatoes.
4. Add the black beans.
5. Pour in the beef broth, and stir to combine.
6. Simmer uncovered for 10 minutes before serving.
