I keep making sweet bread because it’s so easy and tasty! You don’t have to use yeast or knead it.
All you do is mix the ingredients together, pour the batter into a loaf pan, and bake it. And this eggnog bread stand out from other types of sweet bread that I’ve made because it has the classic flavor of eggnog that stands out.
That’s because I used keto-friendly eggnog in both the bread and the icing. The eggnog keeps the bread moist and adds plenty of delicious flavor at the same time.
I added just a tiny bit more cinnamon and nutmeg, but it didn’t need much! The eggnog really adds plenty of flavors to the bread.
Keto Eggnog Bread
Since I used almond flour as the base of this keto eggnog bread, it’s naturally gluten-free, too. Remember to use almond flour, not almond meal.
If you use almond meal, the bread will have a grainy texture. Also play close attention to the type of sweetener that you use in the bread.
I used Swerve confectioner’s sugar substitute because the powdery texture helps the bread have a spongy texture. This bread makes eight servings and there are only 4 grams net carbs in each serving.
Keto Icing
This bread tastes just fine without the icing, but I love how it sweetens the entire loaf. The secret to getting the perfect icing texture is to add the eggnog really slowly.
If you accidentally add too much and it’s too thin, just add more confectioner’s sugar substitute. This will thicken it easily.
Don’t forget to add your favorite keto-friendly nuts on top. I used chopped walnuts because I love how their buttery flavor pairs with the cinnamon and spices in the eggnog icing.

How To Store Sweet Bread
This is the perfect bread to make ahead and store in your freezer. I suggest freezing the bread without the walnuts and icing if you want to freeze it. It will be so much easier.
This method involves wrapping the bread in plastic wrap, putting it in a freezer bag, and freezing it for up to six months.
If you want to freeze the bread with the frosting on, place it on a baking tray and put the tray in the freezer. Once the bread is completely frozen, wrap it in plastic or aluminum foil and put it in a freezer bag.
Store leftovers in an airtight container in the refrigerator for up to three days.

Directions
Preheat the oven to 350 degrees. Add the bread ingredients to a mixing bowl, and blend until well combined and smooth.
Layer the batter in a well greased loaf pan, and bake for 40-45 minutes, until cooked through completely.
Allow the bread to cool to room temperature.
Whisk together the Swerve, vanilla and nutmeg in a bowl. Add rough eggnog to the bowl until the icing reaches your desired consistency.
Smooth the icing over the bread, and top with the chopped walnuts. Allow the icing to set before slicing to serve.
